In sensitive subjects, gluten consumption triggers serious immune reactions, which may cause serious damage to the organism and is named Celiac disease. The Celiac disease is therefore a permanent gluten intolerance, which forces Celiac consumers to totally avoid many types of foods, thus significantly conditioning and limiting these people’s life. Greci Gluten Free Project When eating Out-of-Home it is not easy to identify suitable food since gluten is present in wheat, barley, spelt, kamut, oats, rye thus all the products made from their flours, but it may also be present in flavourings, thickeners and other additives that contain even tiny amounts of such grains.
