People seem to think that you can’t enjoy Christmas without alcohol. Well for some folks Christmas is just asmerry and in some cases merrier! Well we are going to let you all in on a secret to no-alcoholic black cake. It’sthe same exact recipe except you soak the fruits for one day instead (no fermentation required) withnon-alcoholic wine. Just keep in mind that this cake will not keep as long as the alcohol version, but thenagain since when is there ever leftover black cake ?!FOR THE CAKE Baking day – Blend Fruits: Pour the soaked fruit and remaining juices into a blender and blend until1 lb unsalted butter thick and chunky or to desired consistency.1 lb sugar Prepare The Browning:8 eggs1 tsp lemon essence Burn the sugar until it has caramelised and add hot water gradually. Let this2 tsp lime rind (zested) mixture cool.2 tsp almond essence2 tsp vanilla PREPARATION1 lb all-purpose flour 1. Preheat oven to 275F4 tsp baking powder 2. Cream the butter and sugar.2 tsp mixed spice 3. Add eggs one at a time, mixing in1/2 tsp grated nutmeg 4. Add lemon zest, almond essence and vanilla 5. Mix and sift flour, baking powder, mixed spice and nutmeg.THE FRUIT BASE 6. Gradually add sifted ingredients to creamed mixture 7.
