PARAMOUNT Opening its doors on 11 March 2019, SATS INITIATIVES Inflight Catering Centre 2 unveiled its extended kitchen facility C2+ that uses C2+ GRAND OPENING – NOW EVERYONE various state-of-the-art food technologies CAN EAT WELL (Cont’d) to preserve nutritional qualities and optimise taste, while extending shelf life, making it possible to upscale production without the need for preservatives. The Guest of Honour was Minister for Trade and Industry, Mr. Chan Chun Sing who graced the opening ceremony and commended SATS for its culinary expertise and innovation. He affirmed that these factors give us a competitive advantage not just in the aviation sector, but the entire food industry in Singapore. Over 200 guests including Minister Chan were invited to tour the facility. They previewed the Innovation Centre with an adjacent R&D Kitchen, an automated rice line capable of producing about 4.000 rice portions an hour, auto-fryers with the capacity to cook approximately 120kg of rice or noodles in an hour, a thermoforming packing line, and the FreshTech Line that uses pasteurization and sterilization technology to enable extension of shelf life of freshly cooked food without added preservatives. Along with such advanced food techniques in place, SATS also leverages digital twin technology to capture key digital insights for ensuring better quality and consistency in operations. Using real time data, the technology helps SATS simulate different production scenarios and cooking processes for each recipe to optimise the use of resources in its kitchens. This in turn improves operational efficiency and strengthens consistency in reproducing the same recipe for the delight of diners, time after time. Guests also had the chance to sample an array of dishes on the buffet line put together by the SATS chefs and the Innovation & Product Development Team. Highlights included Stew Beef Gulai, Chicken Rendang, Prawns with Chilli Crab Sauce, and Osmanthus Jelly to name a few. The C2+ expansion is poised to serve the growing demand for food-related services in cities all across Asia. It will help to deliver authentic and tasty meals conveniently and safely, with minimal food waste.
