All vineyards have a single wire trellis system and are mechanically hedge pruned and harvested. Rows run both north south and east west with supplementary drip irrigation given. The ability to reach maturity 7 to 10 days earlier on varying soil types can be an advantage in cooler years. VINIFICATION & MATURATION: The machine harvested fruit was crushed and pumped to both rotary and static stainless steel tanks, a cultured yeast was introduced to initiate fermentation. After 5 to 7 days the grapes were pressed and the wine finished fermentation in stainless steel tanks, second and third use oak hogsheads, where the wine remained until the completion of malolactic fermentation. The wine was racked and returned for a further 8 months maturation, where all the individual batches were accessed for suitability, blended, stabilised and filtered prior to bottling off site. VITICULTURE: Semillon is an ideal variety for botrytis as they are thin skinned and tightly bunched which when the Autumn rains and morning dews appear in the Riverina with the lovely warm days the conditions are ideal for the onset of the botrytis cinerea mould. Vines range from 15 years to over 40 years in age. Vineyards are spur pruned by hand in the winter and foliage is hedged in November/December to encourage some lateral growth to ensure there is sufficient canopy to hold the humidity when it occurs around the fruit to promote the botrytis. VINIFICATION & MATURATION: Harvest began early May and lasted six weeks as each vineyard reached desired levels of botrytis. The fruit is crushed and left to soak overnight to further extract sugars and flavour before pressing next morning. Juice is then clarified and fermented in tank and once fermentation is completed the wine is clarified, stabilised prior to filtration and maturation for 12 months. 22% was fermented on French Oak staves, with 8% matured in 2 year old French Oak barriques and the remainder left unoaked to produce a youthful fruity sweet table wine.
