Yet in tandem with this respect for history lies the seed of innovation. In a bold new step, Jim Barry Wines is the first in Australia to plant the popular Greek grape variety assyrtiko. About 200 vine cuttings were released from quarantine and planted in February, and are anticipated to be producing fruit by 2014, intended for a crisp and dry wine style similar to wines produced in Santorini that impressed and inspired Peter Barry.
