VITICULTURE: Select parcels from our Davey Estate Vineyard, situated in the Whites Valley district in the south of the McLaren Vale region. Black and red clays high in calcium grow vibrant, richly flavoured and textured shiraz. Situated between hills and sea the vineyard terroir is tempered resulting in warmer springs and milder summer highs. Wet winters, frost free springs and generally dry summers ideally suit the grape vine, reducing disease pressures and resulting in consistent high quality. Our reasonably tough clay soils allow us to apply stress to the own rooted vines at the required times and supplementary drip irrigation, with sustainable water, helps us manage hot dry spells; resulting in intensely varietal shiraz. Vines are hand spur pruned and foliage wires are used to achieve an open and balanced canopy. Soils are carefully managed to ensure that this precious asset is maintained and improved for the next generation. Grapes are machine harvested allowing picking to occur at the optimum temperature and in a timely fashion. VINIFICATION & MATURATION: Grapes destemmed and pumped to either 24 T automated static fermenters or 5 tonne open fermenters pumped over by hand. Around 9 days after crushing and seeding with selected yeast the fermenter is drained and the skins gently transferred to a membrane press with pressings returned to the free run wine. When sugar dry the wine is racked off gross lees and transferred to full tanks or oak. Post MLF tanks are transferred to oak and the wine undergoes maturation for an average of 13 months in 50% fine grained American Oak Hogsheads and 50% French oak Hogsheads and Puncheons prior to blending. Barrel ages range from new (8%) to 7 year old barrels ensuring the oak is a fine frame supporting the varietal fruit flavours. No fining is required and the wine is cross-flow filtered once prior to bottling through sieve only. SWEET WHITE of the year WINNER THE WINE ASSIST TROPHY Pegasus Bay Encore Noble Riesling 2016 WINEMAKER: Matt Donaldson COLOUR, BOUQUET, PALATE: It is a bright lemon-gold colour. The abundant aromas and flavours evoke impressions of ripe cantaloupe melon, mango, pineapple, lychees, and manuka honey. On the palate, the wine is rich and unctuous. Underneath this, however, there is a streak of minerality and fine acidity that keeps it fresh, lively and refined, drawing out its lingering after flavours. FOOD SUGGESTIONS: A fruit based dessert with acidity such as lemon tart, apple tarte tatin. Poached oranges with Grand Marnier. CELLARING: 10 – 15 years. VITICULTURE: The outcrop of land on which these grapes were grown consists largely of weathered stones and mineral rich gravels. These were shorn off New Zealand’s Southern Alps by an ice-age glacier, which carried them down the valleys and deposited them in selected sites. The vineyard has warm days, but the nights are amongst the coolest in the Waipara Valley, which helps draw out the ripening period and while retaining good natural acidity. This is especially suited to our old riesling vines that have now had time to sink their roots deep into this unique mineral rich terroir. VINIFICATION & MATURATION: We hand-picked riesling from the same vines multiple times in late autumn, choosing only the most beautifully noble botrytic fruit on each occasion. Further hand selection was done in the winery retaining only the best berries. These were gently pressed and a small amount of very rich juice at 45 brix was obtained. It was allowed to settle and the clarified portion was then fermented over many months at low temperatures in order to help retain its special aromas and flavours. The juice was so concentrated that when the fermentation stopped it still had a rich, natural sweetness. It was made in the style of an Alsatian Selection des Grains Nobles or a German Trockenbeerenauslësen.
