With the aged flavours of toast and honey there now is also underlying minerality and subtle green apple highlights. The crisp clean and refreshing acids pull the flavours through to a long elegant finish. FOOD SUGGESTIONS: Fresh South Australian oysters, and also wonderful with South Australia’s famous whiting. CELLARING: 8-15 years VITICULTURE: An amazing early harvest, being almost 4 weeks earlier than we anticipated. This being the fact maturity was still obtained. The early heat in November gave an abundant leaf cover that ensured the ‘sugar factory’ was adequate to maintain the long even ripening that gives greatness in wines at Polish Hill River. VINIFICATION & MATURATION: Picked early in the mornings by machine harvesters so the grapes arrive into the winery for crushing at a cool temperature. Cold fermented over 2-3 weeks and monitored carefully to capture and preserve all those delicate aromatic riesling characters. Once cold stabilized the finished wine is filtered and bottled to retain all those wonderful flavours. RIESLING of the year EQUAL WINNER ADELAIDE CONVENTION CENTRE TROPHY Koonowla The Ringmaster Clare Valley Riesling 2015 WINEMAKER: Koonowla Wines with David O’Leary and Nick Walker COLOUR, BOUQUET, PALATE: The colour of this wine is straw with a pale green tinge. The bouquet has lifted citrus, fennel with orange blossom and spice. The palate is bright and zesty with lemon, lime and hints of mandarin with a balanced fresh acid finish. FOOD SUGGESTIONS: Whiting fillet pan fried and served with a crisp iceberg lettuce salad and boiled small new potatoes garnished with olive oil, flat leaf parsley and rock salt. CELLARING: Drink now but this wine should develop well for the next 10+ years. VITICULTURE: A mild wettish winter followed by a very dry spring and summer, November and December were cool then hot spells in January and early February. Grown on east- west rows and lifted on the southern side to shade from the northern sun to minimise sunburn. The crop was modest yielding 2 tonnes to the acre. We picked the riesling on the 19th of February and delivered to the winery within 2 hours of picking. VINIFICATION & MATURATION: The fruit is destemmed and gently pressed. The free run juice is chilled to preserve the vineyard expression and purity of fruit. Once the juice has settled, it is racked off solids and seeded with an aromatic yeast. A cool temperature controlled fermentation was carried out over the next 14 days till sugar dryness. The wine was chilled to 5 degrees C and filtered then bottled on the 27th of May. VINIFICATION & MATURATION: Four parcels from the Seaview Vineyard were selected for this wine and harvested individually over three days. The fruit was crushed, de-stemmed then pressed gently prior to cold settling for 72 hours. The clear juice was then racked off and each parcel was fermented separately using two different yeasts. A long cool fermentation followed to capture and enhance the pure aromatics. The parcels were then kept on lees for a period of three months, with some stirring to help gain texture and structure. The wine was then blended, stabilised and filtered prior to bottling. The bouquet has lifted citrus, fennel with orange blossom and spice. The palate is bright and zesty with 29ea 24 ea lemon, lime and hints of mandarin with a balanced 750ml 750ml fresh acid finish. FOOD SUGGESTIONS: Whiting fillet pan fried and served with a crisp iceberg lettuce salad and boiled small new potatoes garnished with olive oil, flat leaf parsley and rock salt. CELLARING: Drink now but this wine should develop well for the next 10+ years. VITICULTURE: A mild wettish winter followed by a very dry spring and summer, November and December were cool then hot spells in January and early February. Grown on east- west rows and lifted on the southern side to shade from the northern sun to minimise sunburn. The crop was modest yielding 2 tonnes to the acre. We picked the riesling on the 19th of February and delivered to the winery within 2 hours of picking. VINIFICATION & MATURATION: The fruit is destemmed and gently pressed. The free run juice is chilled to preserve the vineyard expression and purity of fruit. Once the juice has settled, it is racked off solids and seeded with an aromatic yeast. A cool temperature controlled fermentation was carried out over the next 14 days till sugar dryness. The wine was chilled to 5 degrees C and filtered then bottled on the 27th of May.
