Step by step ideas to jazz up your BBQ DFFROOIOOVDDE Melt in the Middle Burgers EQUIPMENT: Chopping board, Knife, bowl, BBQ or Grill Ingredients: 500g 5-7% fat mince beef 1-2 Onions Low fat cheese 1 Egg (optional) Salt, Pepper, mixed herbs (any other seasoning you may like) Method 1. Finely chop the onion 2. Mixed the mince, onion and seasoning in a bowl 3. Add in the egg to help bind the mixture (optional) 4. Cut the cheese into cubes and then using your hands shape the mince into burgers with the cheese in the middle 5. Cook the burgers on a BBQ or grill and serve with salad or bread roll (if available) Top Tip: These could be made with other types of mince (try turkey mince) or Quorn!

Vegetable Skewers EQUIPMENT: Chopping board, knife, bowl, skewers, BBQ or grill Ingredients Peppers, onions, cherry tomatoes, mushrooms, courgettes, corn* 1/4 cup olive oil 2 garlic cloves (finely chopped or minced) Juice from 1 lemon 1/2 tsp Caribbean jerk seasoning (or your favourite spice mix) Salt & pepper * Use a selection of vegetables you enjoy/have available Method 1. Wash vegetables & cut into 1 inch chunks (leave tomatoes whole) 2. Mix the olive oil, lemon juice, garlic & jerk seasoning in a bowl 3. Add the vegetables to the dressing and mix well. 4. Skewer the vegetables, and cook on the BBQ or grill for 10-15 minutes until cooked on all sides 5. Serve with a salad or rice (if available) Top Tip: Can be done without the marinade, simply brush with olive oil and cook! You could also add chicken, fish, or halloumi to these skewers.

Marinated Chicken Thighs EQUIPMENT: Bowl, spoon, BBQ or grill Ingredients 8 skinless chicken thighs 150g fat free natural yoghurt 2 tbsp curry powder Method 1. Combine the yoghurt and curry powder in a mixing bowl - mix well 2. Add the chicken thighs and mix until the chicken is covered in the marinade 3. Place the coated chicken on a BBQ, over or grill until the chicken is thoroughly cooked Top Tip: Chicken drumsticks can be used as an alternative to thighs. Change the seasoning for a different flavour!

Chargrilled Potatoes EQUIPMENT: Saucepan, skewers (optional), tin foil, BBQ or grill Basic Ingredients (per portion) 500g new potatoes 1 tbsp Olive oil Mint Garlic (optional) Salt & pepper Method 1. Parboil the potatoes in a saucepan - about 5-10 minutes, until starting to soften but not fully cooked. 2. Drain the potatoes 3. Skewer the parboiled potatoes and place in tin foil. If you don’t have skewers, just place them in clusters on foil. 4. Mix the olive oil, garlic, mint, salt & pepper in a small bowl 5. Brush the mixture over the potatoes, and wrap them in the foil. 6. Continue to cook on a BBQ or grill until ready to eat Top Tip: Change the seasoning for a different flavour!

Low sugar drinks to enjoy all summer long DFFROOIOOVDDE Alcohol Free Gin & Tonic EQUIPMENT: Glass Ingredients: Gin and tonic flavouring Glass of your choice Low calorie tonic or diet lemonade (your preference) Ice Method 1. Fill your glass with either low calorie tonic or diet lemonade 2. Pour in a few drops of G+T flavouring 3. Add the ice and serve (with a wedge of lemon or lime if you have it!) Top Tip: Prosecco flavouring also available (via Sainsbury’s or online)

Homemade Lemonade EQUIPMENT: Jug Ingredients Lemons (as many as you have/like)* Tap water or sparkling water (depending on what you like best) Ice *You’ll need roughly ½ a lemon per glass, but you can adjust this according to your preference Method 1. Juice the lemons, removing the pips. 2. Add the lemon juice to either tap or sparkling water 3. Serve with ice Top Tip: You could use other fruit such as oranges or grapefruit for a different flavour! Add a small pinch of sweetener or honey for taste if it’s a little sharp!

Alcohol Free ‘Pimms’ EQUIPMENT: Jug Ingredients 2 litres diet lemonade 3 tbsp balsamic vinegar Lemon, orange, strawberry & cucumber slices (optional) Ice Method 1. Pour lemonade into a large jug over ice 2. Add the balsamic vinegar, and mix well 3. Add the fruit slices, and serve Top Tip: Lovely for a BBQ or an evening drink!

Berry Mocktail EQUIPMENT: Hand blender or food processor, bowl/jug Basic Ingredients (per portion) Frozen or fresh berries (red/black currents, strawberries, raspberries, blackberries etc) • Sparkling water (or diet lemonade if you prefer it sweeter) • Ice Method 1. Blitz the berries until smooth, and pour into a jug 2. Add the sparkling water or diet lemonade to the berry mixture, and mix well 3. Serve with ice Top Tip: You can use any fruit to change the flavour - get creative. Mix in some no-added-sugar fruit juice for added taste!

Healthy snacks to satisfy the sweet tooth DFFROOIOOVDDE Cinnamon Popcorn EQUIPMENT: Saucepan & a bowl Ingredients: Popcorn kernels Fry light or oil Cinnamon (ground) Method 1. Put the oil into a large saucepan and heat, add popcorn kernels, cover with lid and shake. 2. The popcorn will begin to pop - once all kernels are popped, remove from the heat, tip into bowl and allow to cool. 3. Sprinkle on the cinnamon (as much as you like, depending on your taste) and mix. Top Tip: Great snack whilst watching a movie!

Fruit Jellies EQUIPMENT: Jelly moulds, bowl, spoon Ingredients 1 pack of jelly Fruit of your choice - tinned or fresh Method 1. Make up the packet of jelly, following the packet instructions. 2. Put fruit into jelly moulds or bowls 3. Pour jelly over fruit. 4. Place in fridge until set Top Tip: Great as pudding!

No Bake Oat Bars EQUIPMENT: Baking tin, mixing bowl, spoon Ingredients 150g peanut butter 150g honey 2tbsp vanilla extract 200g porridge oats 50g brown puffed rice 125g dates roughly chopped Method 1. Grease and line a 30 x 23cm deep tin. 2. Put the peanut butter, honey and vanilla in a large microwavable bowl and microwave for 45 seconds stir and heat for an-other 10 seconds until melted and smooth. 3. Stir in he rest of the ingredients. 4. Tip into tin press down and refrigerate for at least 2 h hours and slice into 20 bars. Top Tip: An ideal snack in-between mealtimes!

Yoghurt Ice Lollies EQUIPMENT: Mixing bowl, spoons, empty yogurt pots (or ice lolly moulds) Basic Ingredients (per portion) Fat free Greek yoghurt Honey Fruit puree (any fruit) Method 1. Mix Greek yoghurt pureed fruit and honey in a bowl. 2. Spoon mixture into empty washed out yoghurt pots, and stand a teaspoon (or wooden stick) upright into each yoghurt mixture. 3. Place in freezer until solid. Top Tip: Ideal for a cool snack during the hot weather! Full bellies for longer, from a Foodbank box.
