DESIGNATIO DAYLESFORD ORGANIC SINGLE GLOUCESTER PROTECTED N OF ORIGIN •• We make this very special cheese on our farm in the Cotswolds using the milk from our herd of rare and native breed, grass pastured Gloucester and British Friesian cows. You can taste the changing of the seasons in the cheese throughout the year, and at Christmas time the lush grasses and wild flowers from our sun-soaked summer meadows give the cheese a bright, sweet and buttery flavour, with melt-in-the-mouth softness. We are one of just a handful of local creameries still making this rare Cotswold cheese. Along with a number of awards for its flavour, Single Gloucester has been awarded a Protected Designation of Origin, so that it can only be made in Gloucestershire with milk from native Gloucester cows. We are incredibly proud to preserve Britain’s living heritage through our farm. Gloucesters were bred locally to our farm since the 14th century, but were in danger of extinction more recently. In 2006 we rescued a small herd and brought them back to the Cotswolds, where they thrived.
