Simple Parmesan Crisps Ingredients 1 cup parmesan cheese 4 Tbsp coconut flour 1-2 tsp rosemary, oregano or any herbs of choice, dried or fresh (optional) Preparation 1. Preheat the oven to 350 Fahrenheit. In a small bowl, mix the coconut flour and grated parmesan cheese. Try to find finely grated parmesan in the deli section of your supermarket, or even better, grate your own! 2. You can add any herbs you like. Oregano and rosemary work wonderfully. 3. Scoop a teaspoon of the cheese mixture onto a baking tray lined with parchment paper leaving a small gap between each. Place in the oven and cook for 10-15 minutes or until golden brown, but be careful not to burn. 4. Remove from the oven and let the crisps cool down before you remove them from the baking tray. 5. Author Notes Parmesan refers to the famous cheese made in and around the Italian province of Parma for the past eight centuries or longer. It is a hard cheese with a nutty and slightly fruity taste.
Breading Kohlrabi & Bacon Rind Balls Ingredients 1 lb smoked bacon, crumbled 5 cups kohlrabi, minced 1 cup pork rinds, crushed 2 1/2 cup grated Parmesan cheese 4 oz mascarpone cheese 4 cloves garlic, minced 1 cup cream cheese 1 tsp onion powder 1 tsp garlic powder salt ad freshly ground black pepper to taste Preparation 1. Chop or blend kohlrabi. 2. In large mixing bowl, combine kohlrabi, bacon, cream cheese, mascarpone cheese, 1 cup grated Parmesan, minced garlic, salt and pepper to taste. Mix until all ingredients are well incorporated. Refrigerate for 2-3 hours. 3. For breading: In a bowl, combine crushed pork rinds, remaining 1 cup Parmesan cheese, onion powder and garlic powder. 4. Remove the kohlrabi mixture from the fridge and prepare about 30 even balls. 5. In a frying pan heat the oil. Roll each ball in Parmesan breading mixture until well and evenly coated. Fry the kohlrabi balls until they are a nice even golden brown all over. Place on a serving plate and serve hot. Servings: 30 Cooking Times
