OUR STORY Eminente is a new Cuban rum from the heart of an island locals call ‘Isla del Cocodrilo’, whose unusual shape resembles that of its native crocodile. Imagined by César Martí, the youngest Cuban Maestro Ronero Rum Master, Eminente is a rich and full-bodied rum that draws its inspiration from 19th-century Cuban sugarcane eaux-de-vie, with all their complexity. FEBRUARY HARVESTING THE AUTUMN CROP Eminent Reserva's unique flavour requires several varieties of sugar cane, planted at different periods throughout the year. Some that are planted in the spring, from April to June, are harvested 22 months later, from November. Others that are planted from July to December, are harvested 15 to 19 months later in either February or March, when the temperature averages a relatively mild 26C MARCH MAKING MOLASSES Instead of being made from sugar, Cuban rum is made from molasses - a dark treacle that's rich in minerals and sugars. Once the sugar cane has been cut, it's shipped off to the factory within 24 hours to be processed into molasses. The molasses are then distilled to 75%, becoming aguardiente, a refined sugar cane extract: the sould of Cuban rum. The molasses produced in Cuba are some of the richest in the world, with a final sugar content of between 54% and 62%, compared to an average of 45% for most molasses. APRIL SIEMBRA TEMPRANA After the harvest of last month, we're replanting sguarcane. But this isn't a once-a-year job. Siembra temprana - early planting - happens in April, in sandier soils and at a depth of around 15-20 cm. A second planting will happen later on in summer - but more on that when it's time. As for these first little plants, we'll check back in one year when they're ready for the next step in the creation of Eminente Reserva.
