Swedish Meatballs Serves 2-3 1 slice of white bread 1oz milk 1.5 tbsp of unsalted butter 1/3c finely chopped yellow onion 16 oz baby bella mushrooms Kosher salt ½ lb of ground chuck ¼ lb of ground pork 1 egg yolk 1/8 tsp of ground allspice 1/8 tsp ground nutmeg ¼ c all-purpose flour 1.5 c of beef broth 4oz of heavy cream In a medium bowl tear bread into pieces and add milk, set aside. Sauté onion and ½ tbsp of the butter in a skillet with a pinch of salt until tender, cool In the bread bowl add ground meat, egg yolk, ½ tsp of salt, allspice, nutmeg and cooled onion, mix gently with hands until completely mixed. Roll into 1oz balls. Bake in 350° oven for approximately 20 minutes or in an air fryer As the meatballs are cooking slice the mushrooms and brown in 1 tbsp of butter. After the mushrooms are nice and brown add flour and mix well. Heat up the broth and add to the mushroom flour mixture, bring to a boil and lower. If you desire a thicker sauce make a slurry from water & cornstarch. Add heavy cream and stir, taste, season as necessary. Add meatballs stir for approximately 10 minutes on low for the flavors to come together. Serve over mashed potatoes, rice or noodles
