· To avoid the biggest crowds and to save on lodg- ing, stay Sunday through Thursday nights. Satur- days during October are very busy everywhere! · If you are exploring the outdoors in our nation- al parks and forests, research first. Frequently, you will not have cell or Internet service in remote areas including many hiking trails and waterfalls. With the varying elevations of the Blue Ridge Parkway, it is the easiest place to find color. The elevation of the Parkway in Asheville is approxi- mately 2,200 feet, and it rises to 6,000+ feet asyou drive north or south. When you find a particular area of brilliant foliage, takea hike, picnic at an overlook or detour on an intersecting road. Be patient and ex-pect slow traffic, especially Saturdays and Sundays. Since the Parkway has lim-ited signage for things to do along the road.Bring a sweater or jacket. While it might be 70 and sunny in Asheville, it couldbe 20 degrees cooler at the higher elevations. Rainy day? Here are some indooroptions for things to do.· Take a picnic or snacks, especially if you are driving the Parkway. Restau-rants and stores can be hard to find in the mFill up the gas tank before leavingthe city. Gas stations are sparse in remote areas and there are none along theParkway.· Don't rely 100% on your GPS to navigate our mountain roads. That's a goodway to get lost. Wonderfully flavorful and fragrant Pumpkin bread for the holidays.\"Ingredients 3 cups sugar 1 cup vegetable oil 4 eggs 2/3 cup water 1 (15 ounce) can pumpkin pu- ree 2 teaspoons ground ginger 1 teaspoon ground allspice 1 teaspoon ground cinnamon 1 teaspoon ground cloves 3 1/2 cups all-purpose flour 2 teaspoons baking soda 1 1/2 teaspoons salt1/2 teaspoon baking powder1 Directions1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans.2. In a large mixing, combine sugar, oil and eggs; beat until smooth. Add water and beat until well blended. Stir in pumpkin, ginger, allspice cinnamon, and clove.3. In medium bowl, combine flour, soda, salt, and baking powder. Add dry ingre- dients to pumpkin mixture and blend just until all ingredients are mixed. Di- vide batter between prepared pans.4. Bake in preheated oven until toothpick comes out clean, about 1 hour.

Ingredients 2 large Granny Smith apples, peeled and cored 2 (10 ounce) cans refrigerated crescent roll dough 1 cup butter 1 1/2 cups white sugar 1 teaspoon ground cinnamon1 (12 fluid ounce) can or bottle Mountain Dew (TM)1 Directions1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch bak- ing dish.2. Cut each apple into 8 wedges and set aside. Separate the crescent roll dough into triangles. Roll each apple wedge in crescent roll dough starting at the smallest end. Pinch to seal and place in the baking dish.3. Melt butter in a small saucepan and stir in the sugar and cinnamon. Pour over the apple dumplings. Pour Mountain Dew(TM) over the dumplings.4. Bake for 35 to 45 minutes in the preheated oven, or until golden brown.

 1 (5 pound) bone-in beef pot roast salt and pepper to taste 1 tablespoon all-purpose flour, or as needed 2 tablespoons vegetable oil 8 ounces sliced mushrooms 1 medium onion, chopped 2 cloves garlic, minced 1 tablespoon butter 1 1/2 ta- blespoons all-purpose flour 1 tablespoon tomato paste 2 1/2 cups chicken broth 3 medium carrots, cut into chunks 2 stalks celery, cut into chunks 1 sprig fresh rosemary2 sprigs fresh thymeDirections1. Generously season both sides of roast with salt and pepper. Sprinkle flour over the top until well coated, and pat it into the meat. Shake off any excess.2. Heat vegetable oil in a large skillet over medium-high heat until hot. Sear the roast on both sides for 5-6 minutes each, until well browned. Remove from the skillet and set aside.3. Reduce the heat to medium and stir in mushrooms and butter; cook for 3-4 minutes.4. Stir in onion; cook for 5 minutes, until onions are translucent and begin to brown. Add garlic, stir for about a minute.5. Stir in 1 1/2 tablespoons flour; cook and stir for about 1 minute. Add tomato paste, and cook for another minute.6. Slowly add chicken stock, stir to combine, and return to a simmer. Remove skil- let from the heat.7. Place carrots and celery in the slow cooker. Place roast over the vegetables and pour in any accumulated juices. Add rosemary and thyme.8. Pour onion and mushroom mixture over the top of the roast. Cover slow cooker, turn to high and cook the roast for 5-6 hours, until the meat is fork tender.9. Skim off any fat from the surface and remove the bones. Season with salt and pepper to taste.

Preheat oven to 250 degrees F (120 degrees C). Grease one baking sheet. 2. In a mixing bowl, whip together the egg white and water until frothy. In a separate bowl, mix together sugar, salt, and cinnamon. 3. Add pecans to egg whites, stir to coat the nuts evenly. Re- move the nuts, and toss them in the sugar mixture until coated. Spread the nuts out on the prepared baking sheet. 4. Bake at 250 degrees F (120 degrees C) for 1 hour. Stir every 15 minutes.

Decidewhich type of animal best fits your personality, lifestyle and family dynamic.Know Your LimitationsNo matter how much compassion you may have for an animal that has spent along time at the shelter, it's important to ask why the shelter is having troublegetting the pet adopted. Pets with special needs take four times longer to getadopted compared to pets without special needs, calculates Petfinder. This is another good test to determine whether adopting thedog will be a good fit within your home. Avoid the pitfall of wanting to adopt acute dog, only to find that he doesn't get along well with your current dog.Adopting a shelter pet is a rewarding endeavor, but rushing to bring a pet hometoo quickly can place undue stress on you and the animal.
