1.MIXERS • THERE ARE THREE TYPES OF MIXER IN BAKESHOP. VERTICAL MIXER SPIRAL MIXER HORIZONTAL MIXER 3

1.1 VERTICAL MIXER THE VERTICAL MIXER IS THE MOSTLY USED IN BAKING PROCESS. 4

1.1 VERTICAL MIXER • THEY HAVE THREE MAIN MIXING ATTACHMENTS : 1. THE PADDLE IS A FLAT BLADE USED FOR GENERAL MIXING. 2. THE WIRE WHIP IS USED FOR MIXING EGG AND CREAM. WHIP EGGS AND CREAM. 3. THE DOUGH ARM OR HOOK IS USED FOR MIXING AND KNEADING YEAST DOUGHS. 5

1.2 SPIRAL MIXER • SPIRAL MIXERS ARE DESIGNED FOR DOUGHS AND HEAVY BATTERS AND ARE USED PRIMARILY FOR MAKING LARGE QUANTITIES OF YEAST DOUGHS FOR BREADS 6

1.2 SPIRAL MIXER • THERE ARE THREE MAIN OF SPIRAL MIXER : 1. FIXED-BOWL MIXERS. THESE HAVE A NONREMOVABLE BOWL. THE DOUGH MUST BE LIFTED OUT BY HAND. 2. REMOVABLE-BOWL MIXERS. THESE HAVE A BOWL THAT MAY BE REMOVED FROM THE MACHINE. THEY ARE USEFUL FOR HIGH-VOLUME OPERATIONS. 3. TILT MIXERS. ON THESE MACHINES, THE ENTIRE MACHINE TILTS UP TO DEPOSIT THE FINISHED DOUGH ONTO A TRAY OR ANOTHER CONTAINER 7

1.3 Horizontal Mixer • Horizontal mixers are large, industrial-size machines. Many horizontal mixers are equipped with water jackets to control the dough temperature 8

2. Dough-Handling Equipment • THERE ARE many TYPES OF Dough-Handling Equipment. • These are some of Dough-Handling Equipment in bakeshop. Retarder : Chilling or refrigerating yeast dough slows or retards the rate of fermentation so the dough can be stored for later baking. 9

2. Dough-Handling Equipment Divider-Rounder : This machine divides the dough, and it then automatically rounds the portions, speeding makeup of the dough products. 10

3. Ovens • Ovens are enclosed spaces in which food is heated by hot air • These are some of ovens in bakeshop. Deck Oven : An oven in which breads and other bakery products are baked directly on the floor of the oven. 11

4. Pans, containers, and molds • Some of them used as a container to store bakery products. Some are used as a mold for giving a shape to bakery products. • These are some examples of Pans, containers, and molds. Barquette : A small boat-shaped mold for petits fours and small tartlets. 13

6. Other tools and equipment • There is many equipment using in bakery process because bakery is quite complicated than foods After this will be some other equipment in bakery product. Hydrometer : Also called a sugar densimeter, Used to test the density of sugar syrups. it doesn’t measure temperature. 33

6. Other tools and equipment Ice cream freezer : Machine for freezing ice creams and sorbets. It consists of a large refrigerated container with a paddle that rotates inside. 34

6. Other tools and equipment Thermometers : Thermometers have many uses in the bakery, It is used for measuring the temperature. 36
