4 Vrydag 28 Mei 2021 Kombuiskuier Skil die aartappels, en sny dit in baie dun skywe. (sowat 1 mm breed) Plaas die aartappels laag vir laag op handdoekrol, met handdoekrol tussen die lae – so haal jy die aartappel se natuur- Jacques Louw like vloeistof uit anders suig dit die melkmengsel op. Voeg ‘n lagie melksous in die bak, met ‘n laag aartappel bo-op. Herhaal dit dan laag vir laag tot jy eindig met ‘n laag melk. Die aartappels moet soos legkaartstukkies inmekaar pas – daar moet nie oop spasies wees nie. Druk die aartappels teen die laaste 2 of 3 lae bietjie plat sodat die melk opstyg – daar moet nie te veel sous tussen die aartappels wees nie. Bak teen 180°C vir sowat 25 minute. Haal dit uit, en strooi ‘n dun laag fyngerasperde harde kaas, soos parmesan, bo-oor alles. Plaas dit terug in die oond vir sowat 15 tot 20 minute, of tot die aartappels sag is en die kaas effens krakerig is. Haal uit, en laat dit rus voor opdiening – die indrukwekkendste van die dis is hoe dit lyk wanneer jy dit sny – fyn lagies in ‘n toring. As jy te veel sous ingesit het sal die ge- doente pap wees en omval. As jy te min sous het, is dit droog. Dauphinoise-aartappels Bestandele: 4 – 5 medium/groterige aartappels Wortel en Sampioen 4 eetlepels botter, gesmelt Osso Buco 150 ml vars room 150 ml melk Bestandele: sout peper knypie gemengde kruie knypie neutmuskaat fyngerasperde harde kaas (parmesan) Metode: 8 medium wortels (in 4 stukke gesny met skil aan) 8 medium sampioene Meng die room, melk en gesmelte botter, en verhit. Voeg die peper, 4 lourierblare sout, kruie en neutmuskaat by die warm melkmengsel. (Dit moet 4 knoffelhuisies bietjie te sout smaak, want jy gaan nie sout op die aartappel gooi 2 koppies rooiwyn nie) Die mengsel moet nooit kook nie, net stomerig warm word ½ koppie groente-ekstrak sodat al die geure kan uitkom. olyfolie sout en growwe swartpeper Metode: Braai die knoffel, seldery, uie, wortels en sampioene in olyfolie in ‘n pan. Plaas dit oor in kastrol en voeg die rooiwyn, groente- ekstrak en lourierblare by. Kook tot die wortels sag is. Voeg sout en peper by na smaak. Bedien met kappokertappels.
