2 OVERdeBERG A big thank you to Getye/Tides wildlife volunteers 21-23/1/2022 The Overstrand's Environmental Department in col- laboration with the Kogelberg Biosphere Reserve Res- cue Team and other volunteers, are helping and look- ing after fire affected wildlife in the Kleinmond area. The Kleinmond Highlands Fire has destroyed ± 5 300 hectares of land. On the photos are tortoises being re- leased into unburned fynbos adjacent to the Kleinmond Golf Course. The Environmental Officer in Kleinmond, Tamzyn Zweig, said a kind Kleinmond resident kept the rescued tortoises overnight in her garden before they released them. They urge residents not to remove live animals anymore as they will make their way to areas that have not burned. Volunteers must please to stay on the formal pathways to avoid trampling of regrowth and to minimise erosion in the burned areas. In hierdie ouderdomsgroep mag 'n ouer die deelnemers vergesel, maar die uitgawes word op sowat R46 000 ge- raam. OVERdeBERG 7 Kombuiskuier Lasagne Pasta & hoender Bestanddele: Olyfolie Bestanddele: 2 uie, gekap Bruinsuiker ½ kg salami (opgekap) 5 hoenderfillette, in stukkies gesny ½ kg beesmaalvleis 250 g skulpiepasta 1 koppie opgekapte ui 1 blokkie hoenderaftreksel 4 knoffeltoontjies (opgekap) hoenderspesery 4 koppies geblikte fyn tamatie Sout 2 koppies tamatiepuree 1 pakkie spek, in repies gesny 2 koppies tamatiesous 1 pakkie sampioene, gekerf of heel 1 koppie water 250 ml room 2 eetlepels suiker 2 tot 3 koppies gerasperde cheddarkaas 1 koppie gekapte vars basiliekruid 2 koppies gekapte vars pietersielie Metode: 1 teelepel vinkelsaad 1 teelepel neutmuskaat Voeg die olyfolie in ‘n elektriese braaipan, en stel die sout en peper na smaak hitte op medium. Braai die uie saam met die bruinsuiker 16 velle lasagna tot dit gekarameliseer is. Voeg die hoender en droë pas- 3 koppies ricottakaas ta by die uie en braai liggies. Geur die hoender en pasta 3 koppies mozzarellakaas met die hoenderaftreksel, speserye en sout (nie te baie 1 koppie gerasperde parmesaankaas sout nie). Voeg elke nou en dan ‘n klein bietjie water by ¼ koppie olyfolie sodat dit nie aanbrand nie. Braai die spek in ‘n aparte pan tot bros. Wanneer die hoender en pasta amper gaar Metode: is, voeg die sampioene en spek by, en roerbraai vir ‘n paar minute. Verlaag die hitte sodat die gereg net liggies Verhit die oond tot 190 grade Celsius. Verhit olyfolie in ‘n prut. Giet die room en kaas bo-oor. Wanneer die kaas diep ysterkastrol, en braai die maalvleis, salami, knoffel en gesmelt is, is die gereg gereed om te geniet. Bedien uie saam. Voeg die tamaties, tamatiepuree, tamatiesous, saam met ‘n vars groenslaai. pietersielie, basiliekruid, neutmuskaat, vinkelsaad, water, sout en peper by. Prut en roer tot goed gemeng. Resepte & foto’s: RSG Resepte Bring 1 liter water tot kookpunt en voeg die pastavelle by. Kook vir 8 tot 10 minute, en dreineer. Rasper die verskillen- de kase en meng dit goed. Pak lae van die vleis, lasagna- velle en kaas in ‘n diep oondbak. Eindig met die kaas bo. Bedek met foelie en bak vir 25 minute. Haal die foelie af, en bak vir 20 minute. Bedien met vars slaai.
