Fermented Grapefruit Roll Fermented grapefruit roll (or normally called fermented grapefruit skin roll) is a very delicious vegetarian dish which has been existed for a long time in Tay Ninh. The additional ingredients for this dish include sour star-fruit, chilli, pepper, Erythrina variegata leaves, Phyllanthus acidus shoots, banana leaves and spices. Grapefruit skin after removing the outer green skin will be chopped and soaked in water for an hour and then crush with finger and washed with water for many times until the bitter taste disappears, then it will be pressed by machine to be dry. Sour star-fruit are sliced thinly and removed all water and seeds and then mix with prepared grapefruit skin and star-fruit water and then steamed. It is required to mix evenly so because without star-fruit water, grapefruit skin will become powder and the rolls will be not delicious. After stiring, the admixture will be put to the bow and mixed with spices and cashew color to have beautiful color. They can add with chopped papaya to have crispy and tough taste. After 4-5 hours, the dish can be served but it is not yet delicious. It needs from 10 hours or more to have a delicious dish. A bite of fermented grapefruit roll will have pinky color, medium toughness, salty, sweet and sour and medium hot taste of pepper and strong hot taste of chilli etc. which all together create a special taste which is completely different for this fermented grapefruit roll. Means of transportation TO TAY NINH In addition to booking tours with travel-tourism companies, the tourists from Ho Chi Minh City can buy car tickets at An Suong Coach Station (Hoc Mon district) or go by bus to Tay Ninh. For young people, you can ride a motorbike to discover the attractive tourism destinations more easily. MOTORBIKE Tay Ninh is 100 km away from Ho Chi Minh City and it takes about 2 hours and a half to 3 hours for travelling. There are two routes: • Drive from Ho Chi Minh City along the Highway 22A to Trang Bang T-Junction, turn right and follow Provincial Road 782 (Boi Loi street, toward Duong Minh Chau district). Just follow Road 782 for more than 50 km, you will arrive at Tay Ninh City. Going along this route will shorten the time. • Drive from Ho Chi Minh City along Highway 22A to Trang Bang T-Junction, turn left (National Highway 22A).
