VTV Chef & Author alentine Warner is a cook, food writer and broadcaster. Training originally as a portrait painter, he went on to become a Chef in London’s kitchens for five years, before running his own catering company. Being in the right place or saying the right thing at the correct moment,Valentine suddenly found himself on television, where his deeplove of cooking, nature and travel has seen him make nine seriesand contribute to others. His television appearances have spanned the BBC; UKTV andFox International and articles have been published for a varietyof magazines and newspapers and he loves radio. Valentine has written four cookery books, three of whichhe illustrated—What to Eat Now, What to Eat Now MorePlease, The Good Table and What to Eat Next. He wouldgenerally prefer to be found in a field rather than an office and ismost likely to be holding a spoon, a fishing rod or a mossy stick. Executive Head Chef Chewton Glen Hotel L and Spa uke has been at the multi award-winning Chewton Glen since 1993. For ten years Luke was senior sous chef, then in November 2003, was appointed executive head chef. Luke is a local man, having attended school andsubsequently college, in Bournemouth. After finishinghis apprenticeship, aged 20, Luke had a brief sojourn atChewton Glen with Pierre Chevillard which was aninspiring catalyst in his early career path. He then worked in the Channel Islands beforemoving to one of the first gastro pubs in Oxfordshire,then heading to the south of France as sous chef atHotel Les Bories, Gordes. Following on from another 18months at Bishopstrow House in Warminster, he finallycame home to Chewton Glen, again, in the capacity ofsenior sous chef before taking over as executive chef. As a great friend and former colleague of JamesMartin he has now appeared on ‘Saturday Kitchen’ andis a popular performer at local Food Festivals.

The Lord Bute Kevin has been head chef at the Lord Bute Restaurant in Highcliffe for the past twenty two years. He originally trained at Bournemouth and PooleCollege and spent part of his training at theMichelin starred restaurant Hotel Alexander nearMontpellier in the south of France. He returnedto work there after he left college for furtherexperience. He later returned to England to workin the kitchens at the prestigious Dorchester Hotelin London under the watchful eye of theacclaimed Anton Mosimann as a chef de partie. Inthe early 80’s he ran the very popular Mrs T’ssupper rooms in Westbourne for 10 years beforejoining the Lord Bute. His cooking is highlyregarded and he has recently been awarded 2 AARosettes.

Chef Director The Pig Group of Hotels James trained with Bournemouth & Poole College and the Academy of Culinary Arts and won a place at the Savoy in London, where he was apprenticed for three years. He went on to join Le Caprice Holdings (The Ivy and Le Caprice) under Mark Hix where he stayeduntil 2001 where he joined J Sheekeys where he rose to be Sous Chef. He was later put in charge of the 6th floor restaurant at Soho HouseNew York. In 2006 James returned to his home in Christchurch as both a seasonedChef and new father and took up a position as Head Chef at the HarbourHeights in Sandbanks. James joined the Whitley Ridge Hotel in Brockenhurst as Head Chef in2009 guiding it through the changeover to the Pig Hotel in 2011. He hascontinued to develop his love of local seasonal food and has done thisthrough working closely with his head kitchen gardener Ollie Hutson andthe New Forest Marque. His main concerns are to respect the environment, to taste and toanimal welfare. He has been awarded two Rosettes from The AA and hasmade it into the Michelin Guide as a recommended restaurant. The Pig hasalso been voted the UK’s most sustainable restaurant by the SRA and hasbeen placed at No.29 in the Top 100 at the National Restaurant Awards. InJanuary 2014 James became Chef Director of the multi award-winning PigGroup of Hotels, guiding through the opening of new restaurants and hotelsin Studland and Bath.

Head Chef The Three Tuns, Bransgore Colin Nash is renowned for his relentless pursuit of innovation in his kitchen, with over 30 years of experience. One of the mostexciting chefs in Dorset, winning many awards for TheThree Tuns over his 8 years in the kitchen. His career began at the young age of 13 helping hismum in local restaurants in Christchurch. After school,he wasted no time in enrolling in Bournemouth andPoole catering college—one of the best colleges inEngland. This led him to Langan’s Brasserie in the heartof London, his first taste of pressure in a busy kitchen. As years went by, he developed a passion andunderstanding of what he wanted to achieve by workingin various hotels and restaurants along the way. Heprides himself on fresh local and seasonal foods andlikes to add the occasional twist. “A good meal is like agood movie exciting you along the way” he quotes.
The Japanese tea ceremony or 'Chado' involves a ritual of preparing and serving Japanesegreen tea (maccha) and sweets that has evolved over several centuries. Thewhole process is not only about drinking tea, but it is all about the processand the details involved. The ceremony features preparation using traditional tools and very particular sequences and movements. It is a calming and beautiful ritual. Meiko Murayama has studied tea for many years and will give a demonstration of how tea is prepared in a tea ceremony, using her own authentic tools and equipment.
