Place the slices on 2 parchment-lined baking sheets, sprinkle 1 small onion, thinly sliced with the pickling salt and let sit for 30 minutes. Rinse well and drain, 1¼ cups distilled white vinegar then pat dry with paper towels and place in a 10-cup jar or container ½ cup plus 2 tablespoons apple cider vinegar along with the sliced onion. 1½ cups granulated sugar 2 In a large pot, combine the white and cider vinegars, granulated ½ cup packed light brown sugar and brown sugars, celery seeds, mustard seeds, pickling spice, kosher 1 tablespoon celery seeds salt and turmeric. Bring to a boil and cook for 5 to 8 minutes. Remove 1 tablespoon yellow mustard seeds from the heat and let the pickling liquid cool completely. 1 tablespoon pickling spice 3 Once cooled, pour the pickling liquid over the cucumbers and 1 tablespoon kosher salt onion. Take a Hike! Get a little closer to nature by trying out one of Ree’s new pastimes. I ’m going to share something you may not know about me: I’m a hiker! OK, I don’t do it all the time, and when I do go, it’s usually because Ladd is making me, but lately whenever I’m on vacation in Vail, CO, I hit the trails. Ladd’s route of choice is called Berry Picker, and its charming little name is deceiving. It is rated “difficult,” which isn’t exactly in the same category as Mt. Everest… but it certainly isn’t a casual little romp either. (The locals refer to it as A** Kicker, and truer words were never spoken!) The last time I hiked Berry Picker, I packed too much water and begged my sister Betsy to carry it. Then I quit on her half a mile in. (Lesson: Don’t hang with me if you’re looking to soar to new heights of fitness.) I’m almost always up for a less intense hike though. It’s such a perfect way to enjoy nature on a beautiful day. WELCOME HOME hen Gaby Dalkin started her food blog What’s Gaby Cooking in 2010, she never imagined she would end up like her friend Ree, writing and developing recipes full-time from home. Back then, she was still in culinary school and working as a private chef. But as her blog grew, so did her need for storage and prep space. By the time she and her husband Thomas moved into a new house in Los Angeles a couple of years ago, Gaby was more than ready for an upgrade. Her first move was to knock down walls, open up the kitchen and add windows so she’d have more natural light while filming cooking tutorials. Then she outfitted the space with the same professional equipment she once used as a chef. Pack 4 dill sprigs, 3 cooked beets (cut into wedges), 6 peeled hard-boiled eggs and ½ sliced sweet onion into a quart-size jar. Heat 1 cup distilled white vinegar, ¼ cup sugar, 2 tablespoons kosher salt, 2 teaspoons each black peppercorns and mustard seeds and ½ cup water in a saucepan to dissolve the sugar and salt. Long before Ree introduced us to chicken spaghetti, Ree’s mom introduced it to the family—and a star was born. ee’s mom, Gerre Schwert, has inspired many of The Pioneer Woman’s best recipes—biscuits and gravy, peach crisp and those legendary cinnamon rolls—but none are as popular as Gerre’s chicken spaghetti. She first baked the cheesy casserole for her kids decades ago, and the family fell in love with it right away. “The recipe was given to me by a member of our moms group when Ree was in preschool,” Gerre says, “so that would be close to 50 years that I’ve been making it!” The dish is a meal in itself, but Gerre likes serving it with a salad or side of broccoli. And when she’s in the mood, she adds sliced mushrooms to the mix. “It’s always a hit,” she says. Ree’s mom’s recipe calls for cooked chicken or turkey. For a shortcut, use rotisserie chicken!
