NO CHURN HAZELNUT ESPRESSO ICE CREAM This is an absolute knockout ice cream with no need for an ice-cream maker or checking the freezer every 30 minutes. The nuts are toasted when they are the colour of milky coffee rather than butter – this will release their aromatic oils and, along with the sea salt, really intensify the flavour of the ice cream. Preparation 15 minutes, plus 8 hours freezing Serves 6 425ML DOUBLE CREAM 1 TSP FINER FLAKED OR SMOKED SEA SALT ½ TSP VANILLA BEAN PASTE 50G HAZELNUTS, TOASTED 397G TIN SWEETENED CONDENSED MILK 125ML VERY STRONG COFFEE OR ESPRESSO, COOLED 1 Using an electric whisk, beat the cream, salt and vanilla in a large bowl until the mixture resembles natural yogurt. 2 Rub the toasted hazelnuts together in a clean tea towel to remove as much of their skins as possible. Discard the papery skins and roughly chop the nuts. Set aside a tablespoon or so to sprinkle over the top, then add most of the nuts, all the condensed milk and cooled coffee to the cream mix and beat together until it thickens to the consistency of natural yogurt. Pour the mixture into a 900g loaf tin, sprinkle over the reserved hazelnuts and cover with clingfilm. Chill in the freezer for at least 8 hours or overnight. 3 Remove the ice cream from the freezer 5 minutes before serving. It will keep covered in the freezer for three months.

FOOD & DRINK Yorkshire Squeaky In Calderdale, West Yorkshire, Razan Alsous and her husband, 180G COUSCOUS Raghid Sandouk, make Yorkshire Squeaky, a halloumi-style cheese 1 TSP GROUND CUMIN inspired by their Syrian heritage. Unable to find great-tasting PINCH OF SEA SALT ‘squeaky’ cheese when they first came to Britain in 2012, they began 420ML BOILING WATER making their own, using locally sourced milk – helped by Razan’s OLIVE OIL, FOR DRESSING THE COUSCOUS background in microbiology and Raghid’s in food engineering. HANDFUL OF FRESH PARSLEY, FINELY CHOPPED 2 LARGE TOMATOES, FINELY DICED COUSCOUS TABBOULEH 3 SPRING ONIONS, FINELY CHOPPED WITH YORKSHIRE SQUEAKY JUICE OF 1 LEMON 1 X 220G PACK OF YORKSHIRE SQUEAKY, SLICED This is a favourite recipe of Razan’s, generally using 1 ROMAINE OR LITTLE GEM LETTUCE mint-flavoured Yorkshire Squeaky, although you could POMEGRANATE MOLASSES OR FRESH POMEGRANATE SEEDS, use the plain version and add fresh mint to the tabbouleh. Spoon the couscous over them and then arrange the cheese on top. Finish with a drizzle of pomegranate molasses or a sprinkling of pomegranate seeds to serve.
