DESSERTS PUMPKIN CHOCOLATE CHIP COOKIES FROM LISA RANKIN, FINANCE TEAM As soon as October hits, there’s no regular chocolate chip cookies in the Rankin kitchen! Adding pumpkin puree and pumpkin pie spice upgrades our basic chocolate chip cookie dough into an AMAZING fall dessert. These will definitely be a hit at any bake sale or dinner party! Ingredients List 3. In a large bowl using a hand mixer, 2¼ cups all-purpose flour cream together butter and sugars until 1 tsp. baking soda light and fluffy. Beat in pumpkin, egg, 1 tsp. pumpkin pie spice and vanilla extract until combined, ½ tsp. kosher salt then add flour mixture. Beat on low 1 cup (2 sticks) unsalted butter, softened until no raw flour appears, then fold in ¾ cup brown sugar chocolate chips. Refrigerate dough for ½ cup granulated sugar 30 minutes. ¾ cup pumpkin puree 1 large egg 4. Scoop 1-inch balls onto prepared 2 tsp. pure vanilla extract baking sheets, 2 inches apart and bake 2 cups semi-sweet chocolate chips until puffed up and golden around the edges, about 12 minutes. DESSERTS STRAWBERRY BANANA CHEESECAKE SALAD FROM LISA RANKIN, FINANCE TEAM This is a refreshing salad that kept showing up at picnics. I liked it so much, I finally got the recipe and now it’s one of my favorite dishes to share. Ingredients List Instructions 1 bag mini marshmallows 1. Rinse strawberries, slice 16 oz. vanilla yogurt (2 cups) (1) 8 oz. cool whip 2. Slice 4 bananas (1) 3 1/2 oz. cheesecake-flavored instant pudding mix 3. Mix all ingredients together in a large 2 containers strawberries, sliced bowl 4 sliced bananas Graham crackers or Nilla wafers 4. Add Graham crackers or Nilla wafer crumbles on top or layer in pan for Tools/Equipment Needed garnish Slice bananas Rinse strawberries 5. DESSERTS TWO MINUTE VELVET FUDGE FROM CHAR PETERSON, ADMINISTRATIVE TEAM This recipe was given to me when I was a caterer by my associate, Julie Nelson. Make sure you only microwave the ingredients for TWO minutes, no more, no less. Even though the chocolate looks like it isn’t melted and ready to mix, trust me: It is. Don’t over “nuke” the chocolate mixture! Ingredients List 3. Remove from microwave and 2 cups milk chocolate chips** immediately add powdered sugar and 1 cup semi-sweet chocolate chips** vanilla. Stir well until smooth. 1 can sweetened condensed milk ¼ cup powdered sugar 4. Add nuts and stir. 1 tsp. vanilla ½ cup chopped nuts (optional) 5. They are full of antioxidants, omega-3s, and fiber. These are easy to make and last about 3-4 weeks in the refrigerator. Ingredients List Instructions 1 cup raw unsalted cashews 1. In a food processor, combine all dry (1) 12 oz. package of pitted Medjool dates 1 tbsp. maple syrup ingredients to mix evenly 2 tbsp. Cocoa powder 11/2 tbsp. coconut oil 2. Add cashews and chop finely 1 tsp. ground cinnamon ½ tsp. Vanilla extract 3. Both my daughters and I love them and drink them regularly, especially when we are on the go! Here’s one of our favorites! Ingredients List Instructions 3 cups of frozen berry blend – mix of 1. DRINKS AND SNACKS VP Bloody Mary FROM VINCE PRESS, MARKETING TEAM Feel free to experiment with other ingredients including: beef bouillon, beef stock, bacon salt, garlic salt, a myriad of hot sauces, fennel, Togarashi Japanese seasoning, pineapple juice and more depending on the profile you are after! Ingredients List To Assemble 1 quart / 32-ounce Clamato Tomato Dip rim of (12-oz.) glass in lemon juice. Cocktail Rim glass with Old Bay Seasoning or other 1 quart / 32-ounce V8 Juice (Spicy) finely ground seasoning mix. 2.5 tbls. Worcestershire Sauce Add Ice. 2 tbls. Tamarind (premium soy) Sauce Add 1 ½ to 2 oz. of your favorite vodka or 2 tbls. Steak Sauce tequila (Bloody Maria) to a glass. ½ tbls. Hot Sauce (to taste) – Tabasco Add six oz. of the Bloody Mary Mix (good brand “Habanero Flavor” is nice ratio to the liquor). 3 oz. dill pickle juice (could use any brine Stir.Top with garnish. Garnishes are i.e. pepperoncini, cherry pepper, etc.) endless of course. At its simplest form, 2 tbls. prepared Horseradish (to taste) make a small skewer with a Buffalo 1 tsp. Other ideas include: shrimp, crabmeat, steamed clam, Dry Ingredients lobster claw, boneless buffalo wing, beef 1 tsp. Dill Weed stick, bacon strip, celery stalk, etc. Serve 1 tsp. Old Bay Seasoning with straw. Enjoy! 1 tsp. Celery Seed (bruised to release essence) 2 tsp. Fresh Ground Black Pepper ½ tsp. Cayenne Pepper (to taste) Instructions Combine Clamato and V8 in Large Pot. Vigorously stir (or use hand blender) in other wet ingredients. Vigorously stir (or use hand blender) in dry ingredients.
