These sound like valid reasons for most of society to go gluten-free; however, there is also an argument that following a gluten-free diet can lower levels of certain vitamins and nutrients that are commonly found in grains. You’ll be surprised by just how many essen- tial vitamins and nutrients you could be miss- ing: B vitamins, D vitamins, omega-3, iron, calcium, fiber, thiamin, riboflavin, niacin, and folate. Lower levels of these nutrition es- sentials can lead to risk factors for heart at- tacks, vascular disease, and strokes. A person is also more likely to have constipation on a gluten-free diet because many of the gluten- free grains are stripped of fiber. Also, if a per- son on a gluten-free diet is not careful and is eating processed gluten-free goods instead of whole foods, they may be adding more fat to their diet, in addition to other fillers which companies add to replace the gluten textures, calories, and nutrients. How do you know if you should go gluten- free? Many people have gluten sensitivity or celiac disease. Approximately 1 in 100 people have celiac disease, and many are unaware that they do. No one knows how many peo- ple have gluten sensitivity, but estimates are that this may be found in as much as 50% - 70% of the population. Many people with sensitivity to gluten who have had great re- sults from going gluten-free said they did so because they had been tired, headachy, and felt like their digestive system was always off. Other people complain of rashes or unusual skin ailments, depression, anxiety, irritabil- ity, brain fog, or trouble paying attention. How do you go gluten-free? The first thing I suggest is to focus on food that is naturally gluten-free. There are many good ones: pota- toes, rice, lentils, avocados, leafy greens, eggs, apples, bananas, mangos, grapes, pine nuts, walnuts, almonds; there is an endless list of amazing gluten-free foods. Figure out what gluten is and where it hides -- in A LOT of processed, packaged foods, sauces, dressings, et cetera. One thing I can say is you are less likely to have to worry about hidden gluten if you cook your own food and eat as naturally as possible. I've included a few of my favorite gluten-free recipes. You can find all of these ingredients in your local grocery stores. These recipes are easy to make and delicious. If you are not vegetarian, you can add animal protein to these recipes. YOGI FOOD Spaghetti Squash with Lentil and Quinoa Roasted Brussels Sprouts, Stufed Acorn Squash Chickpeas, and Onions Baking Time: 30 minutes + 15 minutes after stuffing Yields: 2 servings Baking Time: 60 minutes for squash + 20 minS COOKING Yields: 4-6 Servings 1 acorn squash, chopped in half 1 spaghetti squash 1 cup quinoa 1 pound Brussel sprouts ½ cup lentils, red or green 1 medium onion, halved and thinly sliced 1 red bell pepper, chopped 4-5 cloves garlic, chopped 3 cloves garlic, pressed 2 tablespoons of coconut oil ½ cup vegetable broth ¼ tablespoon cumin 15 ounces chickpeas, rinsed and drained ¼ tablespoon turmeric 2 teaspoons dried basil sea salt and pepper to taste ¼ teaspoon red pepper flakes (or to taste) salt and black pepper, to taste Set oven to 350F. Cut squash in half and place in a baking dish filled with 1/2 an inch of water. Place flesh side down and bake sliced almonds or avocado, optional for 30 minutes. Preheat oven to 400F. Pierce a spaghetti squash a few times In the meantime, cook 1 cup quinoa and 1/2 cup lentils together with a knife (pierce deeply through flesh into center). Diane is a legend in the music business. I have seen people moved to tears when they ran- domly meet her on the streets of Paris or in boutiques in NYC. We have had adventures all over the world and I know firsthand that a healthy lifestyle is incredibly important to her. Because of her love for animals and involve- ment with animal-related nonprofits, she is a vegetarian. She has a giant heart and one time even bought a cow that she had seen in the newspaper, which had been on its way to slaughter! The cow now lives free and happy at an animal sanctuary. A significant component of her healthy lifestyle is a plant-based diet. We have eaten at almost every vegan restau- rant in LA; one of our favorites is Crossroads. Diane works out regularly and is a big fan of yoga. Her office has a gym where she works out with a trainer several times a week, includ- ing with the elliptical and weights. She says it plain and simple, “A healthy lifestyle is impor- tant because it is fu*king important to stay healthy.” When Diane is operating at the top of her game, the entire world benefits through her music! PURITY MEDITATION WITH THE RADIANCE SUTRAS BY DR. LORIN ROCHE “From purity arises dislike for one’s body,” says Patanjali in the Yoga Sutras. What? Run that by me again. Who would have thought that purity would be a problem? The full verse from the Sutras, translated by Christopher Chapple, is “From purity arises dislike for one’s body and noncontact with others.” (Yoga and the Luminous). Dropping the diacritical marks, the Sanskrit looks like this: Saucat sva anga jugupsa parair asamsargah. Sauca - purity; sva - own; anga - body, limb, member; jugupsa - dislike, abhor- rence, disgust; parair - others; asamsargah - noncontact, nonassociation. Jugupsa is an intense word, and Sanskrit texts tend to mean exactly what they say. “Dislike, abhorrence, and disgust” can grab us unexpectedly, as a side effect of yoga practice. When I frst started practicing yoga and meditation, I quickly developed an aversion to meat. This took me by surprise, because as a teenager in the 1960s, I had never heard of vegetarianism. After doing my afternoon practice, though, I just didn’t like the smell of meat cooking, and instead, found myself craving salads. So I would eat a big salad at the begin- ning of dinner and fll myself up. It was an instinct. I just found myself taking great pleasure in green crunchy vegetables. Soon I was driving long distances to fnd the one place in Orange County that had fresh carrot-celery-parsley juice. Next I developed disgust for cigarette smoke.
