Editor’s Note Gigiri Inside Out | March 2020 Rediscovering Joy and Gratitude good Medicine Acheerful heart is good medicine, but a crushed spirit dries up the bones. You will find this quote in the Bible, in Proverbs 17:22. Interesting that it actually says ‘medicine’. We all agree that gratitude is a good thing; so it’s not a controversial subject, neither is it rocket science. It’s pretty simple. But gratitude is also one of the most powerful, provocative, life-changing states of being. The key to everyday joy. It’s like a pair of glasses that get progressively sharper: the more we thank, the more we see to be thankful for. For me, it is the lens that reveals God’s incredible grace at work. But can we go so far as to think of it as medicine? Good medicine? Absolutely. Scientific research is confirming that an ounce of gratitude is worth a pound of cure. Some ‘soft’ benefits of practicing gratitude include the tendency to exercise more, having a better diet, minimal chances of substance abuse, better relationships, improved productivity and performance, better sleep, better stress management, excellent mental strength and, you know it, cardiovascular health. What’s more, it reduces blood pressure, results in adherence to medication, can literally cure depression, significantly lowers the biomarkers of inflammation, decelerates the effects of neurodegeneration , lowers levels of Hemoglobin A1c, a key marker of glucose control that plays a significant role in the diagnosis of diabetes; the list goes on. Sounds like medicine to me! So this March, don’t let gratitude be brushed aside for more impulsive states of mind like irritation, impatience, and plain old exhaustion. The annoyances of everyday life can easily overshadow the intention to count our blessings. I suggest that you minimize, so that you have space to breathe and be thankful. Ingredients • 200g pack spicy cooked chicken fillet (we used Waitrose sweet chilli mini fillets) • 250g leftover cooked rice or a 250g pouch pre- cooked rice • ⅓ cucumber, finely chopped • 2 carrots coarsely grated • 20g pack mint leaves, roughly chopped • 150ml pot low-fat natural yogurt • 1 tsp clear honey • pinch chilli powder Directions 1. Chop the chicken into bite-size pieces and mix with the rice, cucumber and carrots. 2. Mix half the mint with the yogurt, honey, chilli powder, and seasoning. Stir into the rice and sprinkle with the remaining mint.
