Entrada Grilled Mero SeabassRecipe Yields: 2 EntréesMero:2ea 6-8oz Portions of Seabass (we use Mero Seabass, but any similar fish will be fine)Skin and remove bones if any.Salad Mix: Peel the cucumber, jicama and mango. Quarter and deseed the½ Green Bell Pepper cucumber and tomato. julienne the peppers, mango, cucumber,½ Red Bell Pepper jicama, tomato, green onion (only the dark green parts) and the¼ Fresh Mango Napa Cabbage. In a mixing bowl, place all julienned vegetables¼ Cucumber and toss with juices from the lime and orange. Cover and2oz Jicama refrigerate while cooking the Seabass (you can cut all the2 Green Onions ingredients the day prior, but keep them separated until just½ Tomato before plating).½ Orange½ Lime2 Cups Napa CabbageSesame Dressing:1/4 cup Soy Sauce1/4 cup Rice Wine Vinegar1 tbsp Red Wine Vinegar2 tbsp Fresh Lemon Juice2 tbsp Sesame Oil2 tsp Sugar1/4 tsp Salt2 medium Garlic Cloves,3/4 cup Vegetable Oil MincedIn a small bowl, whisk together the soy sauce,rice wine vinegar, red wine vinegar, lemon juice, sesame oil, sugar,salt and garlic. Gradually whisk in the vegetable oil until well blended.Candied Lemon Zest:1 Cup Sugar1 Cup WaterZest of 1 LemonWhisk Water and Sugar in sauté pan until dissolved. Bring to a boil. Reduce to a simmer.Then add lemon zest. Cook for 5-10 minutes, and then remove from liquid and allow to cool.Garnish:1 Whole Peach1 tsp Butter2oz BrandyCut the peach into approximately 12 pieces – Feel free to use frozen peaches if it is all that is available.Cooking Instructions:Season the Seabass with salt and pepper. Then grill it for 4-5 minutes on each side or untilinternal temperature reaches 130 degrees Fahrenheit. Next sauté the peaches in butter overmedium-high heat until tender and slightly caramelized. Remove pan from heat and addbrandy to de-glaze. Return to heat and cook off alcohol (beware that the brandy will flameup). Plate the salad mixture and then drizzle on thesesame dressing. Place the seabass on top of thesalad. Garnish with the Brandy Peaches. Saturday, February 14th, the Kokopelli Restaurant will be closing at 3:00pm to prepare for Valentine’s Dinner.

Golf Tip: You Are Your Own Swing Doug Roberts Director of Instruction The majority of today's golfers have heard and seen more about “golf swing mechanics” thanany prior generation, due primarily to the seemingly endless supply of information, videos and commonrandom opinions available on the internet, TV and magazines. However, the average golf handicapindex for avid card-carrying members is getting worse, not better. Are we making the game easier orjust more complicated? Even when a concept can be debated as true via comparison to a TouringProfessional doesn't necessarily mean it will automatically apply to you and your game. Tour Playersare different animals. They've earned the right to attempt some of the things that they do with theirgolf swings and bodies.To begin to play more efficiently and injury-free, we need to step back and take a good look atourselves. How's my mobility? How's my balance? What type of shots can I consistently play? Howaggressive can I go after the ball while still able to maintain decent contact? What should MY golfswing concept be? Here's an easy test to start with. If what you are currently trying to do in your golfswing causes tension in your mind or body.....the Captain Obvious inside you knows it's not helpingand only making the game more difficult.Finding your own swing and identifying your own individual tendencies (good and bad) will lead tobetter golf. It will be easier to coach yourself through the ebbs and flows that golf brings us. Thecommon objective of all golf instruction is to achieve correct, consistent contact between the clubfaceand the ball relative to the desired outcome. How that is achieved, thankfully is open to the individual’ssignature. New to the Golf CourseOver the last few months the Club hired Anderson Concrete A gboiglftchoaunrkssetmo athinetegnuaynscien!to recreate the walk-ups to certain tee boxes around thegolf course. The initial goal was to remove all of thewooden paths and stairs with a material that would not onlybe aesthetically pleasing but also more durable and safe formembers and guests. During the process, the greenscommittee selected sets of stairs that could be replaced withpaths. Replacing steps with paths has provided safer accessto the tee for golfers and for our maintenance personnel.After receiving a few samples from Anderson Concrete, wedecided to proceed with black concrete with an exposedaggregate finish. The aggregate is comprised of commonconcrete sands and black obsidian chips. The black obsidianis highly concentrated at the surface to ensure the blackcolor fades very little over time. The Entrada lava and thisaggregate are very unique and we believe they complementeach other very nicely.The installation of the paths and steps is completed, butthere is still work to be done. All of the paths will be linedwith natural lava rock to give the paths an appearance ofcontinuity with the surrounding environment. Wherever thesteps or paths meetturf the grade of theturf will be adjustedto structures toprovide a seamlesstransition. Thisincludes levelingmost of the teeswhere the paths orsteps lead. A lacquerwill be applied tobring out the naturalblack color of theconcrete. This will bea time consumingprocess, but we’rehappy with theresults of thecompleted teecomplexes to date.

BYU at ENTRADA CLASSIC—MINNESOTA RETURNS TO DEFEND TITLEThe BYU women’s golf invitational will return to Entrada in March 14 - 17, celebrating 12 years at ourClub. Defending champion Minnesota headlines a field of fifteen including major conference teams from theBig-10, Pac-12 and Big-12 plus newcomer Yale from the Ivy League.The teams will arrive on Saturday, March 14 with a practice round on the 15th and tournament play on the16th and 17th. The tournament will include competition among 15 teams with a total of 84 players.Participating colleges and universities include:BYU KANSAS STATE TEXAS STATEBOISE STATE MINNESOTA UVUCAL BERKELEY NORTH TEXAS WEBER STATEDIXIE STATE SAN FRANCISCO WYOMINGIOWA SUU YALEAs in the past five tournaments, the collegiate athletes will again be guests of Entrada, staying in members’homes. We encourage all Entrada residents to open their homes to these fine athletes and welcome themto our community. The schedule of events will be as in past years:Saturday, March 14: Teams arrive; pick up at the Inn at Entrada by host families. Host families provide a team welcome dinner for players, coaches and traveling family members in one of the host family’s homes.Sunday, March 15: Practice Rounds. Breakfast and lunch at the Club provided by BYU; Banquet for teams, coaches, parents and host families at the Club provided by BYU.Monday, March 16: Tournament Play; 36-holes shotgun start; Breakfast, lunch and dinner for teams and coaches at the Club provided by BYU.Tuesday, March 17: Tournament Play; 18-holes shotgun start; Breakfast at the Club provided by BYU. 2:00 pm: Awards Presentation.Mark your calendars and support these collegiate athletes. Some of our Entrada residents have hosted thesame team each year, forming long-lasting relationships. As a host all you need to provide is one bedper athlete, the Saturday night dinner, transportation to and from the golf course, and a welcoming homeenvironment.We will also need scorers and spotters on the course for the Monday and Tuesday of tournament play. AllEntrada members are invited to participate and everyone will be provided with the rules and regulationsnecessary to carry out these volunteer positions.
