AWI INFO NYEPI DAY OR SILENT DAY IN BALI March 9th 2016. Observed from 6 am until 6 am the next morning, Nyepi is a day reserved for self-reflection, anything that might interfere with that purpose is restricted. The main restrictions are no lighting fires (and lights must be kept low), no working, no entertainment or pleasure, no traveling and for some, no talking or eating at all. The effect of these prohibitions is that Bali’s usu- ally bustling streets and roads are empty. The only people to be seen outdoors are the Pecalang, traditional security men who pa- trol the streets to ensure that the prohibitions are being followed. Although Nyepi is a Hindu holiday, non-Hin- du residents and tourists are not exempt from these restrictions. Although they are free to do as they wish inside their hotels, no one is allowed onto the beaches or streets and the only airport I Gusti Ngurah Rai International Airport and all seaports and Bus Terminals in Bali remain closed for the entire day. INSTRUCTIONSStep 1Place the chicken in a saucepan. Add the water, lemongrass, lime leaves, half the garlicand salt. Bring to the boil over medium-high heat. Reduce heat to medium-low. Coverand simmer for 25-30 minutes or until the chicken is just cooked. Transfer the chicken toa plate, reserving the poaching liquid. Cool slightly. Remove and discard the skin andbones. Shred the chicken. Transfer to a bowl and keep warm.Step 2Use a mortar and pestle to pound French shallot, ginger and remaining garlic until acoarse paste forms. Add the cumin, ground coriander and peppercorns. Pound until pep-percorns are coarsely crushed. Stir in turmeric.Step 3Heat oil in a saucepan over medium heat. Cook the French shallot mixture, stirring, for 3minutes or until aromatic. Add reserved poaching liquid. Bring to the boil over high heat.Reduce heat to medium. Simmer for 5 minutes to develop the flavours. Strain through afine sieve into a large bowl. Season.Step 4Cook the noodles following packet directions. Drain. Divide among bowls.
