\"เมนูผัด\" ( Phud ) Thai stir-fried dish 1

Meaning of \"Phud\" \"Phud\" or stir-fry is a method of cooking the food in a pan or wok over a heat with oil or a little water Then quickly turn back and forth until cooked. This cooking method has been around for more than 2500 year and there is record that the existence of this cooking method is older in foreign country like China. Most of the food that are stir-fried are often serve a la minute and spending only little amount of time to cook. 2

\"หมูผัดพริกเผา\" (Moo phud prik phao) Chilly paste Pork Who has leftover chili paste, let's make a menu of stir- fried pork with chili paste for a meal. This recipe adds vinegar to add a sour taste. Or whoever uses lemon juice or tamarind juice as they like. Add some spiciness from the chopped chili follow by any type of work, I personally love pork belly. Even better with crunchy pork belly. No one would resisnt asking for more. As for me everyday, can I have more rice urgently? 3

Ingredient 1 Tbsp Minced Garlic 3 Tbsp Chili paste 200 g. Pork 1 Tbsp Palm Sugar 2 Tbsp Fishsauce 1 Tbsp White Vinegar 2-3 Tbsp Water As need Bird Eye Chilli As need sliced Green Onion Vegetable oil (for stir-fried) 4

Cooking Method 1.Add vegetable oil, add vegetables, add garlic, fried onion, add chili paste, chili paste, and stir fry, then add in pork 2.Season with palm sugar, fish sauce and a bit of vinegar and continue stir. 3.Add in chopped bird eye chili, mix well and serve with chopped green onion and coriander leaves. 5

Cooking Method 1.Wash the squid throughly and prepare it by separating head and body follow by internal cleaning. cut them in to bite size 2.Break the egg yolk and add in the seasoning sauce, chili sauce and palm sugar. 3.Heat the wok with oil and stir fry the garlic and onion. Add in the sauce, heat them then add in the squids mix well till cook and heat off. 4.Serve with spring onion as garnish 9

Cooking Method 1.Wash the crab and unshell the carapace of the crab. Separate the body in the 4 part. 2.Break the eggs into a bowl, add oyster sauce, soy sauce, and sugar then beat the egg. 3. Heat the wok over medium heat and add oil when the oil is hot add garlice, stir until golden brown 4.Add crab meat and stir until almost cooked, add onion and curry powder. Follow by egg mixture in hot wok, stir till cook and serve with chopped green onion as garnish. 13

Cooking Method 1.Boil and cook the sliced pumpkin untill 70% cooked 2.Heat the Pan or Wok over medium heat, add in chopped garlic and stir. Season with Soy sauce, Oyster suace and sugar 3.Add in egg and follow by cooked pumpkin and add basil leaves after turn off the heat. 4. Serve 17

Cooking Method 1.Pound the garlic in mortar and scoop it in to heated wok or pan with oil over medium heat. 2.Crank an egg in to the wok or pan and wait, stir when its cook. 3.Add pork and stir until pork is cooked. 4.Season with black soy sauce, sugar, and fish sauce. 5.Add in noodle, if too dry add water a little then add kale and carrot and finished 6.Serve with pepper as garnish and slices of lime 21

Many snacks will often contain shrimp paste, fish flavorings, or other seafood- derived ingredients for a salty tang. 24

Ingredient Noodle 150 g. All Purpose Flour 1 no Egg 1/4 Tsp Salt Pork 200 g. Minced Pork 1 Tsp Fish Sauce 1 Pinch Salt 2 Tsp Coriander Root 2 Tsp Garlic 10 Seeds White Pepper Corn 1 No Egg RIce Oil (for frying) 26

Cooking Method 1.Season the egg and beat it, add flour and mix well. Wrap with plastic wrap and rest for 20 min. 2.Make filling with Coriander root, pepper, garlic, salt, and eggs. Mix it with grounded pork and season with fish sauce and add 1 Tbsp of egg 3.Cut the pork in to smaller pieces and shape them in to a ball (10g per ball) 4.Roll the rested dough into a thin sheet. Cut with a knife into small strips, cover them with a cloth to keep them from drying out. 5.Lightly smear the tip of the dough with the remaining egg. Wrap the pork tightly and evenly, brush with egg, repeat. 6.Fry them in hot oil (180c) until golden brown. and serve 27

Ingredient 200 g. Roughly Chopped Shrimp 3 No eggs 1 No Coriander Root 2 Cloves Garlic 2 Tbsp Pepper Corn 1 Tbsp Salt 1 Tbsp Sugar 1 Limb of Coriander Root 1 No Sliced Thai Red Chilli Vegetable Oil (for stir-fried) 30

Cooking Method 1.Pound coriander root, garlic and pepper together then add it in to heated wok with oil. 2.Add pounded pepper to fry until it release good aroma then add in minced shrimp and season with salt and sugar, stir well. 3.beat the duck egg in a bowl and strain through a sieve 4.Heat a teflon pan with little oil over low heat. Dip your hand in the beaten duck egg, gently sprinkle it into the pan to form a string. Crossed back and forth to form a net Once the eggs are cooked, scoop up and set aside. 5.Wrap the shrimp with egg net and serve with coriander and red chili as garnish. 31

Krathong is made from wheat flour mixed with duck eggs, coconut milk, etc. Dip the Krathong mold in the flour pan and fry it to make a Krathong shape according to the mold. The Gra Thong tong filling is made with chicken, onions, potatoes and stir-fried with sweet and salty seasoning. 33

Ingredient Batter 1/2 Cup Wheat Flour 1/2 Cup Rice Flour 1 No Egg Yolk 1/2 Tsp Salt 1/2 Tsp Sugar 1/3 Cup Limewater 1/3 Cup Water 1 Tbsp Vegaetable Oil Chicken Filling 1 Cup Minced Chicken 1/4 Cup Raw Sweet Corn 2 Tbsp Sugar 2 Tbsp Fish Sauce 1 Tbsp Wheat Flour Vegetable oil (for stie-fried) 34

Cooking Method 1.For the batter, Mix every ingredient all together finely 2.Fry the batter in the pan. by heating Dip the Krathong Thong mold in flour and place it in hot oil. when it starts to yellow Remove the mold, scoop it up and place it in a wire rack to drain the oil. 3.Stir fry pepper, coriander root and garlic in medium heated oil. 4.Add in chicken follow by carrot and corn 5.Season with fish sauce, sugar and liquid flour, Stir until dry. 6.Fill the fried batter with the stir fried mince chicken and serve with coriander leaves as garnish. 35

The outstanding identity is The flower-like appearance looks delicate and beautiful. Use purple color from butterfly pea flower juice. People these days may not know the appearance of an ancient Thai dessert like Chor muang. Maybe the looks and the name may sounds familiar but not the taste Because it's hard to find, even if it's sold, it is very expensive. 37

Ingredient Pork Filling 1 Tbsp Vegetable Oil 1/4 Cup Boiled Pork Belly 150 g. Candy Winter Melon 1/2 Tsp Salt 1 Tbsp Sugar 50 g. Roasted Sesame 50 g. Roasted Peanut Batter 1 Cup Rice Flour 1/2 Tbsp Arrowroot Flour 1/2 Tbsp Tapioca Flour 1 Cup Jasmine Water 10 no Butterfly Pea Flower 38

Cooking Method 1.To make the filling, stir fry the pork belly over medium heat untill cooked. Add candy winter melon while lowering the heat, add salt sugar and add white sesame seeds and peanuts. 2.To make the batter, sieve the rice flour and tapioca starch together. mix with oil water and jasmine water little by little. cut in half 3.add buttercup pea juice and lime juice in to the mixture and deep fry in oil in low heat and remove from heat after 5 - 10 min. dust it with little flour and cover with towel to prevent it from dry. 4.Make a petal and flower and steam it on the banana leaves for 5 min after brush it with oil. 5.Serve with cabbage and chili. 39

Cooking Method 1.To make the sauce, mis all the ingredient in the pot and heat them in low - medium heat until they melt and mix well. 2.As for the sides, small dice every ingredient as well as wash and clean the lotus petal. 3.Put the side on the petal and pour the sauce on top and serve. 43
