2017 TRUSTCO GROUP INTERNAL MAGAZINEIOL MAKES SIGNIFICANT CONTRIBUTION TO EDUCATIONThe Institute for Open Learning (IOL) sponsored N$100 000 worth of equipment and textbooks to the Ministry ofEducation, Arts and Culture for distribution to the Erongo Region, the Onyaanya Circuit in the Oshikoto Region,St Boniface College in the Kavango East Region, and Negumbo Senior Secondary School in the Omusati Region.The sponsorship is for use in the 2017 academic year.The recipients were nominated on the basis of exceptional performance in the Namibia Senior SecondaryCertificate (NSSC) and Junior Secondary Certificate (JSC) examinations by students and their teachers. KITCHEN COLUMN Ingredients Boned thick rib of lamb, cut into 20 cm cubes Breast of lamb, sawn into 30 mm pieces 2 tablespoons of Cooking oil 3 Medium onions, chopped 1 Garlic clove crushed Pinch of Salt Freshly ground black pepper Dried or chopped fresh basil Canned tomatoes, chopped Tomato puree 1 can White pepper Sugar 6 Potatoes,cut in quarters Preparation Prepare the meat Peel and chop the onions Peel and crush the garlic cloves Chop the tomatoes and reserve the liquid Peel and quarter the potatoes Method Brown the meat in heated oil in a heavy based sauce pan. Add the onions and garlic and sauté until the onions are translucent. Add the seasonings, tomatoes and liquid, tomato puree, pepper and sugar. Reduce the heat, cover with the lid and simmer for 1 ½ hours. Add the potatoes and let simmer for further 45 minutes or until the potatoes are cooked.
