Shiraz 2015 Eagles’ Nest, located on the crest of Constantia Nek pass, is nestled at the foot of the awe inspiring Table Mountain. This pristine and boutique family owned vineyard has in recent years gained a striking reputation for both its beauty and award winning wines. Uniquely characteristic of its wines is its signature of finesse, derived from the cooler climate conditions its vines are exposed to as a result of its elevation and close proximity to the oceanic body that is False Bay, thus delivering very distinctive wines not found elsewhere in South Africa. Quality and consistency is paramount at Eagles’ Nest. Our unique terroir, combined with meticulous attention to detail in the vineyards and cellar, yields wines that are the epitome of elegance and balance. Production: The vineyard aspects range from East to North, and are perfectly positioned for a cool climate Shiraz. All grapes were handpicked, de-stalked and crushed into medium sized open top fermenters. Punch-downs or pump-overs were performed three to four times per day. Fermentation took 12 days to complete, after which the free run wine was drawn off and the skins were pressed. The wine was then racked into French oak barrels. After 18 months in barrel (40% new), selected components of the wine were blended to create a complex and harmonious finished product. Description: This wine has a deep dark core with garnet rim. On the nose, aromas of whole black peppercorn, blackcurrant and subtle black cherry are delicately entwined with a faint smoky wisp, star anise and cloves. These aromas are complemented by a savoury, mouth filling palate with distinct pepper spiciness and soft, integrated tannins. Well-judged acidity focuses these flavours as they resonate in the aftertaste. A truly great wine from maturing vineyards, this wine will age gracefully for 20 years from vintage. Production: Grown in the cool climate Constantia Valley, all grapes were carefully hand-picked and transported to the cellar where they were cooled overnight in a specialised cooling room to 5ºC. The following morning the whole bunches were placed in a pneumatic bag press and gently pressed recovering about 55%. The juice settled overnight in a stainless-steel tank, after which only the premium clear juice was racked off to 15% first fill 500L French Oak barrels, 40 % second and 45% third fill barrels. The fermentation temperatures were relatively low, peaking at 18ºC. During the wine’s maturation in barrel, it received a fortnightly batonage and topping up. After 6 months maturation the barrels were blended together and the wine was allowed to harmonize before being bottled. Description: This wine reflects a light golden hue, testament to its barrel fermentation and maturation. Initially attractive notes of kumquat, fresh lime zest and minerality follows through to delicious aromas of elderflower, rose water and blooming spring jasmine. Delicate and subtle fresh vanilla pods become evident as the wine develops in the glass. As the wine has not undergone malolactic fermentation, the mid-palate is fresh, yet beautifully balanced with the richness and structured offered by even handed wooding. The finish is fresh and crisp, testimony to its cool climate origin. Enjoy now or to 2025. Sauvignon blanc 2019 Eagles’ Nest, located on the crest of Constantia Nek pass, is nestled at the foot of the awe inspiring Table Mountain. Production: This is the 7th vintage of Sauvignon Blanc made on the estate. The grapes come from two cooler-climate coastal vineyard sites especially chosen for their ability to produce world-class Sauvignon Blanc. We hand-harvested the grapes into small lug boxes and transported them in a refrigerated truck to the farm in Constantia, where they were cooled further in a specialised cooling room to 5ºC. The following morning the bunches were de-stemmed and gently pressed, recovering about 70% of the juice. The juice settled overnight in a stainless steel tank, after which only the premium clear juice was racked off and inoculated with a cultured yeast strain. The fermentation temperatures were kept low around 14C. After fermentation, the wine remained on the lees to give it further complexity for 6 months. Description: The nose initially shows opulent tropical fruit aromas, including flavours of pineapple and gooseberries. These notes are underpinned by a fresh zesty core. As the wine evolves, it develops green apple and kiwi aromas, with intriguing floral tones. The palate is fresh, with juicy yellow fruit. Six month’s lees contact shapes a well structured mid palate, balanced by beautiful fresh acidity. This wine will be ideally paired with sushi, grilled fish and shell fish. Enjoy now or to 2023. Merlot 2015 Eagles’ Nest, located on the crest of Constantia Nek pass, is nestled at the foot of the awe inspiring Table Mountain. Production: The vineyard aspects range from North East to North West, against rugged mountain slopes. All grapes were hand-picked, hand sorted and crushed into medium sized open top fermenters. Punch-downs and pump-over’s were performed three to four times per day, these practices being determined by twice daily tastings of the tanks. Fermentation took 9 days to complete, after which the free run wine was drawn off and the skins pressed separately. The wine was then racked into first, second and third fill French oak barrels where malolactic fermentation took place. Six different cooperages were used, each specifically chosen to complement the different nuances of this very complex wine. During maturation, the wine was racked three times. After 18 months in barrel the best barrels were racked to tank and blended to create a harmonious finished product. A light filtration preceded bottling in February 2017. Description: This wine exhibits a deep plum colour. The nose is inviting with red currants and black cherry, combined with subtle spice and tobacco leaf aromas. The palate is a multi–layered array of red and black berry fruit, enveloped by smooth rich tannins. Hints of rosemary and olive tapenade give a pleasant herbal freshness. As with all Eagles’ Nest reds there is a subtle peppery savouriness that makes this wine both distinctive and gives testament to its origin on a cool wind-swept mountainside. Although ready to drink now this wine will benefit from correct cellaring until 2025. The Little Eagle Red 2017 Eagles’ Nest, located on the crest of Constantia Nek pass, is nestled at the foot of the awe inspiring Table Mountain. Production: The grapes for this wine were harvested from 13 and 14 year old vines. All grapes were hand picked, de- stalked and crushed into medium sized open top fermenters. Punch-downs and pump-overs were performed three to four times per day, these practices being determined by twice daily tastings by the winemaker. This ensured that at all times the fermenting must evolved to embody the desired style. The fermentation temperature was controlled between 24 and 30 degrees Celsius. Fermentation took 7 to 10 days to complete, after which the free run wine was drawn off and the skins were pressed in a 3.5 ton pneumatic bag press. Malolactic fermentation was completed in stainless steel tanks, after which the wine was transferred to first, second and third fill barrels. After 16 months in barrel selected barrels were racked to tank and blended to create a harmonious finished product. Description: The 2017 Little Eagle Red is a deep red colour. Shiraz dominated, this wine offers dark fruit and spicy aromatics, including flavours of clove and aniseed. On the palate, the spicy tones are complemented by earthy tones, leading to a structured palate with firm yet accessible tannins. This wine is ready to drink now, but will benefit from further aging for up to 10 years from vintage. Conservation: The Little Eagle range is proudly associated with the Western Cape Raptor Research Programme, whose activites include conservation of the last breeding pair of Black Eagles’ located in the Table Mountain National Park. Production: This wine comprises of a component of red Merlot grapes that were harvested specifically for the production of Rosé. Once picked, these grapes were cooled down to 5°C and immediately pressed to extract a pink juice. This juice was then settled, and clear juice was separated and fermented in Stainless steel tanks for 20 days at 15°C. Two other components were produced through the process of extracting a percentage of juice (bleeding) from Shiraz and Merlot grapes, destined to become red wines. The juice was also settled and fermented in the same manner as described above. After fermentation, the wines were tasted and a final blend created. After a light fining and filtration, the wines were bottled and labelled – ready for market. Description: This wine showcases a spectacular luminous, platinum pink colour. The nose offers intense ripe red summer fruit, including flavours of watermelon and strawberries. The red fruit flavours are complemented by aromas of Turkish Delight and rose petals. These carry through to a fresh pallet with bright acidity, complemented by the distinct minerality associated with the cool Constantia growing conditions. A perfect wine to enjoy on warm summer days spent with family and friends. Serve Chilled.
