Seasonal Duxelle Wild Mushrooms Heat grape seed oil to 200°C in pan, salt and black 3 oz. Duck Foie Gras pepper both sides of Beef Tenderloin then sear both 2 oz. Caul Fat sides in pan Pinch Kosher Salt Foie Gras Pinch Black Pepper Slice Foie Gras, season well, then sear both sides in 1 oz. Chopped Shallots 3 oz. Madeira Wine very hot pan 1 oz. Chopped Truffle Mushrooms Duxelles Few Drops White Truffle Oil Sweat chopped shallots in sweet butter in a sautée 3 oz. Veal Stock pan, sautée mushrooms duxelles in seasonings, adding 4 oz. Grape Seed Oil chopped parsley at end 1 oz. White Wine Baking Pinch Chopped Parsley Place Foie gras and mushroom duxelle on tenderloin, 2 oz. Sweet Butter wrap well in caul fat, sear very quickly in hot pan, allow Puff Pastry As Required to cool and wrap in puff pastry, egg wash pastry, bake in oven at 200°C until golden brown Ingredients Method Preheat broiler.2 tablespoons olive oil In large skillet, heat oil over medium-high heat. Add onion; saute1/4 cup chopped onion 1 minute. Add all mushrooms and garlic, saute until beginning to brown, about 6 minutes or until liquid evaporates. Remove from5 cups chopped Asian mushrooms, King oyster, oyster, shimeji heat. Season with salt and pepper & finish with sesame oil.1 garlic clove, minced Top each toast with about 1 tablespoon mushroom topping and grated parm. Drizzle w/ truffle and chili oil. Place toasts on1 cup freshly grated Parmesan rimmed baking sheets.
