February makes us think of love and Paulette Naylor matters of the heart. Hank and I have been married 46 years. I am a former nurse and he recently retired from his medical practice. We met in college. Actually, he was still in school and I had just graduated from the University of Virginia and was working at the hospital. Dish it Up Dark Chocolate A study published by the Journal of the American Heart Mascarpone Association found that habitual chocolate eaters had a lower risk of cardiovascular disease. Ingredients: ½ cup Mascarpone Cheese 1 cup Dark chocolate For Toppings: 1 ½ cups Heavy cream Whipped Cream 2 teaspoons Powdered sugar Raspberries 1 teaspoon Vanilla extract Instructions: In a microwave-safe bowl, place the chocolate and cook on high for 1 - 2 minutes, stirring every 15 seconds until the chocolate is melted. Set aside to cool at room tem- perature. In a medium bowl, use an electric mixer to beat the mascar- pone cheese, sugar and vanilla until soft peaks form. In a sep- arate bowl, use an electric mixer to whip the heavy cream until smooth. Do not overmix. Add the mascarpone mixture and mix until combined. Fold the chocolate into the mascarpone and heavy cream mixture. Put into small cups and decorate with whipped cream and a LILY RODRIGUEZ raspberry. Enjoy!!!
