Ingredients required: • 1/2cup peanuts(mildly roasted & soaked in water) • 1/2tsp turmeric powder • 1/2cup gram flour (besan) • 1/2tsp cumin seeds • 1/2cup rice flour • Chopped veggies onion, tomatoes • & coriander- 1 bowl • 2 tsps. tomato ketchup • Salt & chilli powder • Finely chopped small ginger knob • 1 cup water • chopped green chillies Preparation: Dosa Batter Take a mixer jar, add 1/2cup peanuts (mildly roasted & soaked in water) add finally chopped small ginger knob add some chopped green chilies, add approx. 3/4cup water grind to make smooth batter (as dosa consistency) now add1/2cup gram flour, add 1/2cup rice flour, add salt as per taste, add 1/2tsp turmeric powder, add 1 tsp cumin seeds now add 1/4cup water and again grind it (check batter consistency then add water as required). Method Now heat up the pan to make dosa add some oil and wipe with a tissue pour batter and spread it around with the help of spoon. Add some finely chopped veggies (onion tomato and coriander- optional) sprinkle some salt & chilly powder drizzle some oil around dosa. Cook it on medium flame. Flip when it turns golden-brown cook for a while and flip again. For serving Fold Dosa in the middle and transfer on a plate. # 3 VEG KATHI ROLl Ingredients required: 1 cup – wheat flour 2 tsps oil 2 onions medium size 1 tsp ginger-garlic paste 1 tsp garam masala 1 tsp turmeric 3 tsps green capsicum 1 Tomato 2 tsps tomato ketchup 3 tbsp paneer 1 tsp coriander leaves Salt to taste Sufficient water 2 tsps oil 1 tsp jeera Preparation: Take 1 cup of wheat flour, add 2 tsps. oil,, little salt ,sufficient water, then knead to soft dough. Cover it with damp cloth and rest it for 5 minutes. In a pan, take 2 tsps. oil,1 tsps.jeera,onions. (sliced) Cook till it gets light brown in colour. Add 1 large tomato sliced,1tsp ginger and garlic paste,1tsp garam masala,1tsp turmeric,salt to taste, 1tsp coriander powder,3 tsp. green capsicum,2 tsp tomato ketchup,3 tbsp. crumbled paneer,mix all things and cook for 2 minutes. Add the chopped coriander.Roll the dough and make a roti shape , roast it in half.Apply green chutney on it.Then pour vegetable filling on it. Put some chopped onion in, then roll it, cut in half diagonally and serve hot. 3

# 5 MASALA MACRONI Ingredients required: 2 cups Boiled Macroni 3tbsp Tomato ketchup ½ tsp Cumin a pinch Kasoori methi powder ½ tsp Garlic chopped handful Coriander chopped ½ tsp Ginger chopped ½ tsp Turmeric 1 no Green chilli chopped ½ tsp Kashmiri chilli powder ½ cup Onion chopped 1½ tsp Coriander powder ¼ cup Capsicum chopped ½ cup Tomato chopped Preparation: For the sauce, heat a pan and add oil and butter, add cumin, chopped garlic, ginger and green chillies. Saute and add the chopped onions. Cook the onions for 2- 3mins and then add the turmeric, chilli powder, coriander powder and give a quick stir. Drop in the tomatoes along with salt and cook for another 2-3 mins. Pour tomato ketchup, kasoori methi and chopped capsicum. Add the pasta, sprinkle with some salt and add a dash of pasta water. Cook for 3mins and turn off the heat. Add the chopped coriander, mozzarella cheese cubes and toss again. Plate and serve it hot. 5
Ingredients required: CHEESECAK LIME GEL GINGER E CRUMBLE 1 cup ¼ cup ½ cup cashews, cashews, almonds soaked soaked overnight 3 ¼ cup ½ tablesppons powdered tablespoon powdered jaggery jaggery jaggery powder ¼ cup water 4 medium ¼ teaspoon leaves of ginger, spinach grated 3 ½ tablespoon A pinch of tablespoons lemon juice salt lemon juice and lemon zest ½ tablespoon lemon zest (zest is prepared by finely grating the peel of a fresh lemon) Preparation: PRE-PREPARATION- Soak the cashews in water for 5-6 hours For Cheesecake :- Blend all ingredients in a blender. Pour in a pan. Chill in the freezer for 5-6 hours. Once frozen, remove from the pan and cut into squares, circles, triangles or whichever shape you like. Store in refrigerator until ready to serve. For Lime gel :- Blend all ingredients until perfectly smooth. Pour in a squeeze bottle and refrigerate. For Ginger Crumble :- Quickly pulse the almonds in a blender. Mix the rest of the ingredients by hand. To assemble all components together :- Sprinkle 3 piles of ginger crumble on a plate. Place a piece of cheesecake on top of each pile. Garnish with lime gel, microgreens and edible flowers. 6
# 7 CHEESE CORN BALLS Ingredients required: • 2 tbsp butter • 2 1/2 tbsp plain flour (maida) • 1/2 cup warm milk • 3/4 cup boiled and crushed sweet corn kernels • 1/4 cup finely chopped coriander (dhania) • 2 tsp finely chopped green chillies • 1/3 cup grated processed cheese salt to taste bread crumbs for coating oil for deep-frying TO BE MIXED INTO A BATTER • 1 cup plain flour (maida) • 3/4 cup water Preparation: To make cheese corn balls, heat the butter in a deep non-stick pan, add the flour and cook for 1/2 minute. Add the milk and allow to simmer till the mixture thickens and leaves the sides of the pan, while stirring continuously. Remove from the flame and transfer to a plate. Add the corn,cheese, coriander, green chillies and salt. Allow it to cool completely. Once cooled, mix well and divide the mixture into 15 equal portions and shape each into a round ball. Dip a few balls at a time in the flour-water mixture and roll them in the breadcrumbs till they are evenly coated on all the sides. Heat the oil in a kadhai and deep-fry the cheese corn balls a few at a time on a medium flame till they are golden brown in colour on all the sides. Drain on absorbent paper. Serve the cheesy corn balls immediately with tomato ketchup. 7
Ingredients required: • 1 cup- Mixed Dry Fruits (almonds, cashew nuts, walnuts) • 10-12 number of dates/khajoor • 1/3 cup- cocoa powder • Walnuts as required for garnishing Preparation: • Coarse grind the mixed dry fruits in a grinder jar. • Add cocoa powder and grind the mixture again. • Finally, add dates in batches (3 at a time) and grind it. Once it forms a dough, take it out on a plate. • Shape it and keep it in the refrigerator for 1 hour to set. # 9 CAULIFLOWER PIZZA Ingredients required: • 1 cauliflower 1 tsp oil 1 egg Salt 1 tsp black pepper 1 tbsp Italian seasoning ½ cup mozzarella cheese 1 yellow capsicum 1 cup onion 4 tomato cherries 1 tsp Tomato ketchup Preparation: Take 1 head cauliflower, grind it in a blender to a smooth paste, then sauté it for 10 minutes in a pen without oil.In a bowl take 1 egg, put salt and pepper, 1tbsp Italian seasoning,½ cup mozzarella cheese, pour saluted cauliflower, mix it.Take a microwave plate put cauliflower mixture and make it as a big chapatti shaped round by dabbing mixture then bake it for 400 F for 10 to 15 minutes. For dressing: Take sliced yellow-coloured capsicum , onion sliced 1 cup, 4 tomato cherries cut into half. Now it’s time to make the final pizza. Dress the cauliflower roti with tomato ketchup, pour a little cheese on,then dress it in your dressing masala and bake at 400 F for 15 minutes in the microwave, then serve hot. 9
Traffic Lights Ingredients required: • 1/2 cup each of ragi & besan • 1/2 cup curd. • 2 tsps tomato ketchup • 2 tbsp tomato chopped • 2tbsp chopped onion • 2 tbsp capsicum chopped • 2-3 green chilli • 3-4 tbsp. of oil • 50 gm Besan Bhujia • salt ( as per requirement ) • ½ tsp ginger paste • 2 tbsp coriander leaves • 3/4 cup water • 1/2 tsp turmeric • Green Chutney / Ketchup Preparation: In a large bowl take ½ cup each of ragi ,besan and ½ cup curd.Add ½ tsp salt and approx ¾ cup water.Mx well without forming any lumps.Rest it for 20 minutes or till besan and ragi swells completely.Further , add 2 tbsp onion, 2 tbsp tomato, 2 tbsp capsicum, 2-3 green chilli(as per taste) ,½ tsp ginger paste and ½ tsp turmeric and 2 tbsp coriander leaves.Mix well and add water if required to get thick flowing consistency batter. Now grease the pan with oil and spread a ladleful of batter thickly.Post few seconds, pour ½ to 1 tsp. of oil around the edges and on upper side as well. Cover and cook the cheela for 2 minutes or till it gets cooked well.Flip over and press gently making sure cheela gets cooked from both sides.Continue to simmer for another minute or till cheela gets cooked completely. 10

Bowl 2- mix one cup Maida and 1/2 tps. baking powder/ 1/4 TSP baking soda. Add this mixture to the bowl 1 gradually and keep mixing it. Now, pour 1/2 cup milk into the batter & mix well . The cake batter is ready. Divide this batter into 3 equal parts in three separate bowls. Now take food colours- orange & green colours. Put ½ tsp. orange colour, pour in first bowl and ½ tsp.green colour in second bowl. Do not add any colour to the third bowl. (Now our batter is ready in three colours) Grease the cake pan. First pour green coloured batter, then pour plain batter and lastly pour orange coloured batter . Bake : Take one big bowl and put the greasy cake pan in the bowl and leave for 35 minutes on gas. 11

Place the batter firmly on previously greased non stick tawa. Press the batter very gently n cover it with lid keeping an eye on it n drizzle some ghee n flip it making it light brown from both the sides. Ingredients required: • Whole grain bread • Butter • Pizza sauce, • Chopped veggies- onion, broccoli, carrot, corn, capsicum etc. • Bell pepper, • Mozzarella cheese or cheddar cheese. • Mixed herbs & chili flakes. Preparation: • Grease a pan lightly with few drops of butter & toast the wheat grain bread slices on one side slightly & then flip them to other side a little. This will prevents the bread from turning soggy. • Spread homemade pizza sauce as desired on the bread. Layer the chopped veggies on the bread now with onion, broccoli, carrot, corn, capsicum, lettuce & bell pepper. Next spread the grated cheese. Use mozzarella cheese or cheddar cheese. Sprinkle mixed herbs & chilli flakes(optional) as desired. Place them on the pan & cover the pan & cook on a low heat till the cheese melts. Make sure the bread don't get burned at the bottom. Serve the hot pizza sandwich as a snack. • Pizza Sandwich in oven :If making in oven, preheat the oven to 220 C or 430 F for 10 mins. Then place the bread slices as mentioned in Tawa recipe. Grill for 8 minutes at 430 F or 220 C till veggies get grilled & cheese melts. Adjust the grill time if needed. 13
Ingredients required: 2 Papad 1 Cup Namkeen 1 Small Onion 1 Small Tomato 4 Tablespoon Coriander Leaves Chaat Masala as Required Black Salt as Required 2 Tablespoon Boondi 2 Green Chilli 2 Tablespoon Lemon Juice Preparation: Chop the Veggies Firstly, chop the onion, tomato and green chillies into small pieces. Add them to a bowl.Now add namkeen mixture to it. You can use aloo bhujia, bombay mix, khatta meetha or any other namkeen of your choice. Add lemon juice, coriander leaves, black salt, chaat masala, boondi and mix well to prepare the stuffing. Roast the Papad Cut papad into half and roast them on a non- stick tawa. Once cooked, fold each half into a cone and hold them for a few seconds so that they retain their shape. Fill and Serve Fill the prepared stuffing into the cones and serve. Enjoy! 12
Ingredients required: • 2 cups gluten free flour mix (one with tapioca or potato starch), reserve 2 TBS • 1/4 cup sugar (raw sugar or granulated) • 1/4 tsp baking powder • 1/2 tsp sea salt • 2 TBS vegetable oil • 1 medium egg • 1/2 cup milk • 2-1/2 tsps vanilla extract • 3-3/4 tsps yeast • Oil for coating the basket or crisper plate • Honey or pure maple syrup for glazing Preparation: In a large mixing bowl, add 1-3/4 + 2 tablespoons of the flour, 1/4 cup sugar, baking powder, salt. Whisk or beat everything until the shortening is integrated into the mixture and the dough resemble grainy peas. Warm the milk to just lukewarm, not hot. Place this in a small bowl. Add the vanilla and 1-1/2 teaspoons of sugar. Whisk in the yeast until smooth. Set this aside for up to 5 minutes until the yeast starts to bubble. Once the yeast has bubbled, give it a quick whisk. Pour this into the flour mixture and stir to combine. You should have a sticky ball to work with. If the dough doesn’t come together into a ball that you can pick up in your hands, stir in more flour, a very little at a time. Pick up the ball and knead for about a minute between your hands. With 1/2 the remaining flour, dust a board or clean countertop. Place the dough on the floured surface and press gently to flatten. Dust the top of the disc with more flour. Roll the dough into a 1/2 inch thick circle. Using a round biscuit cutter or a glass, cut 10 to 12 round donuts. Using your fingers, gently poke a hole in the center of each donut and form a 1/2 inch wide opening (donut hole) in each. You will have some extra dough after cutting the donuts. Gather the excess and roll it into golf ball sized donut holes. 5. Place the donuts and donut holes on a baking sheet. 6. Preheat your oven on to 200°F. Then, turn the oven off. Place the sheet pan of donuts in the warm oven so they can proof (rise). Leave them alone for 30 minutes or until they have doubled in height. 7. Preheat the air fryer at 350°F for 3 minutes with the timer set for 20 minutes. 8. Brush or spray the fryer basket or plate with a light coating of oil. Place a single layer of donuts and holes in the fryer and cook for 4 minutes or until just golden brown. Remove them to a serving platter and drizzle with honey or maple syrup. Continue these steps until all the donuts are cooked. 9. Serve with napkins and enjoy.
