A Note from the Editor: Thank you for donating to the Seattle Hospitality Emergency Fund and supporting your local bar and restaurant community. Washington state is home to thousands of talented, hardworking restaurant and bar professionals who desperately need the support of their friends and loyal customers during this challenging time. These professionals have been our gracious hosts; they have offered guidance to explore the esoteric, an ear to confide in, and a welcoming smile to make us feel at home. They are real people who have dedicated their time and talents into making Washington State one of the best places in the world to grab a drink and see a friendly face. In my time in restaurants, I have witnessed the very best in American drinking culture and the community it builds. It is in that same spirit of community that I offer you—the loyal regular and friend of the bar—this book. These recipes are for you to make these drinks at home because, at the time of this writing, you cannot order one at your favorite bar. But this book is also here to showcase the talent that has served our grateful community, night in and night out. Perhaps there are some bars mentioned here that you have not heard of and, once their doors open again, you might consider visiting these wonderful establishments to see these folks in action. It’s always the good ones who leave us too soon. It’s in his memory that I dedicate this compilation. The Yeh Yeh Yeh 2 ½ oz. Woodford Reserve bourbon ¼ oz.
