Canning Home canning or bottling, also known colloquially as putting up or processing, is the process of preserving foods, in particular, fruits, vegetables, and meats, by packing them into glass jars and then heating the jars to create a vacuum seal and kill the organisms that would create spoilage. Important Note: Home canning is an excellent way to preserve garden produce and share it with family and friends, but it can be risky—or even deadly—if not done correctly and safely. ... If home canning is not done the right way, your canned vegetables and fruits (as well as canned meats, seafood, and other foods) could cause botulism. YOU CANNOT WATER BATH FOODS WITH LOW ACIDICITY LIKE MEATS AND VEGEATBLES, YOU HAVE TO PRESSURE CAN THESE AS THEY CAN CAUSE BOTULISM. Fruits, Tomatoes and Relish’s/Salsas can be water bathed (You will usually add lemon juice in them to ensure the acidity is high enough.) Always refer to your altitude for the correct pressure or time to water bath. All books refer to sea level in their instructions
