CHOCOLATE CAKE POPS INGREDIENTS 2 3/4 c. all-purpose flour 1/2 tsp. baking powder. 1/4 tsp. kosher salt 1 c. In a large bowl, whisk together flour, baking powder and salt. 2. In another large bowl, using electric mixer on high speed, beat butter and sugar until light and fluffy, about 3 minutes. Beat in egg and then vanilla. 3. Reduce mixer speed to low and gradually add flour mixture, mixing just until incorporated. Divide dough into 4 portions. Keep portions wrapped in plastic while coloring. 4. Working with 1 portion at a time, add a couple of drops green food coloring to dough and mix until fully incorporated. (Tip: Tint slightly darker than you desire; cookies will bake up lighter.) Roll between 2 sheets of parchment paper to 1/8 inch thick. Chill until firm, 30 minutes in refrigerator or 15 minutes in freezer. Repeat with remaining dough. 5. Heat oven to 350°F. Line baking sheets with parchment paper. Using floured cookie cutters, cut out cookies. Place on prepared sheets. Reroll, chill and cut scraps. 6. Bake, rotating positions of baking sheets halfway through, until cookies are light golden brown around edges, 10 to 12 minutes. Let cool on sheets 5 minutes before transferring to wire racks to cool completely. 7. Use royal icing to “glue” cookies together in tree shapes with stars at top and chocolate caramels as trunks. Dust with confectioners’ sugar if desired.

Let cookies cool for 1 minute on sheets, then transfer to Red and green gel food coloring, if desired wire racks to cool completely. SANTA HAT CHEESECAKE BITES INGRDIENTS - 1 plain cheesecake (homemade or store- bought) - 1 1/2 c. whipped cream or Cool Whip - 12 strawberries, tops sliced off DIRECTIONS 1.Using a round biscuit cutter, punch holes out of cheesecake. (Depending on the size of cheesecake you should be able to get 8 to 12 cheesecake bites.) 2.Transfer whipped cream or Cool Whip to a piping bag and pipe a layer on top of cheesecake. 3.Top with strawberry, sliced side down. 4.Pipe a dot on top of the strawberry and serve.

Eggnog Mousse Snowmen You will need: MOUSSE DECORATIONS FROSTING 2 1/2 c. heavy cream, cold 2 oz. semisweet 4 large egg whites 1 1/2 cinnamon sticks chocolate chips 1 c. granulated sugar 6 cloves 1 oz. red candy melts 1/4 tsp. cream of tartar 5 gratings whole nutmeg mini chocolate chips pinch of salt 20 marshmallows orange jelly beans 3 tbsp. unsalted butter 4 oz. white chocolate, chopped Directoions: 1. In a small saucepan, heat ½ cup cream with cinnamon, cloves, and nutmeg until bubbling around edges, about 4 minutes. Remove from heat and let spices steep at least 1 hour. 2.Meanwhile, microwave chocolate chips at 50% power in 30-second increments, stirring in between, until melted and smooth. Let cool slightly to thicken, then transfer to a resealable bag and cut off one corner to make a small hole. Pipe arms and buttons into insides of small glasses and let set completely. Repeat, using candy melts, for bow ties and scarves outside the glasses. 3.Strain spiced cream into a large microwave-safe bowl. Add marshmallows, butter, and white chocolate and microwave in 30-second increments, stirring in between, until completely melted and smooth. Let cool to room temperature, about 30 minutes. 4.Using an electric mixer, beat remaining 2 cups cream until stiff peaks form. Stir spoonful of whipped cream into marshmallow mixture, then fold in remaining whipped cream. Transfer to prepared glasses and refrigerate while preparing frosting. 5. Place egg whites, sugar, cream of tartar, and salt in large bowl of an electric stand mixer set over a pan of barely simmering water. Whisk mixture until sugar dissolves and it is hot to the touch. Transfer to mixer and whisk on medium-high speed until stiff, glossy peaks form. Spoon into a large piping bag fitted with large round tip. Pipe snowman heads and use mini chocolate chips for eyes and jelly beans for noses.
