Shopping Places TAMU Pronounced as ‘tah-moo’, tamu is a part of Sabah heritage; it is an open-air market where the local people would gather around and sell and buy their goods and produces. Visiting tamu in Keningau is a fascinating experience, a veritable immersion into the local culture of Sabah, discovering part of the charm that the old world must have had. Walking among people from various tribes, farmers, fishers and hunters, craftsmen and artisans, one can see the real everyday life of Sabah; meet the authentic people and their traditions. It is also a great place to buy authentic products and exotic food ingredients, a place to socialize with the locals and explore the colorful culture of the destination. There are a few places in Keningau where they held tamu; one in Apin-apin, one in Keningau Ground and there’s also night market held in Keningau town. Tamu Ground Keningau Tamu Ground Keningau is a weekly tamu held every Sunday. As early as 6 am, traders start to setting up their stalls on Tamu Ground Keningau; the area will be jammed up by traffic as most of the locals spend their Sunday morning to buy fresh vegetables and other goods. Travelers also can buy their hand-made souvenirs, dried seafood, and believe your eyes - as this tamu also filled with bundle stalls! Try not to drool whenreading!Pinasakan Pinasakan is a popular dish among the Kadazandusun in Keningau. The dish features the basung fish, a type of fish that usually found in rivers. The idea is to extract moisture from the fish, and in order to make the dish, the basung fish is cleaned and cooked in a pot over very low heat, with just asam keeping, turmeric, ginger, lemongrass and salt. It’s braised until much of the liquid has evaporated.The fish takes on a slightly sour taste but a good pinasakan should havea balance of saltiness as well. Pinasakan can be kept for up to two weeks.This traditional dish is usually home-cooked and is not readily available inrestaurants in Keningau.TuhauTuhau is a popular food among the Kadazandusun community. Tuhau is atype of wild ginger that grows in the jungles of Sabah. It is most commonlyeaten pickled, as a condiment to the mainmeal or sometimes made into sambal, asan added ingredient into dishes and mostrecently, dried and deep-fried. It can befound Keningau weekly tamu; sold in a rawform or pickled and usually sold in jars.Although tuhau looks like a wild ginger, ittastes nothing like ginger, but tastes closerto lemongrass.Bosou or NonsomAnother popular traditional Kadazandusunpreserved dish is the Bosou, or also knownas Nonsom. This dish is made using rawfreshwater fish in a small size, such as ikanpelian. To make Bosou, ikan pelian is mixedtogether with rice, pangi (local herb), bungorand a lot of salt. After the mixing, the mixtureis stored in a glass and marinated for twoweeks. The smell can be overwhelming atfirst, but its fishy saltiness is a delicacy thatcannot be missed. It is eaten as a condiment to rice, or sometimes mixed intostir-fries with chili and garlic. Not commonly found for sale, Bosou usuallymade by Kadazandusun families. 53
Eat Like a Local Linopot Linopot refers to rice that is steamed in a leaf, usually the Doringin or leaf from the tarap tree, which are big enough to wrap around the rice. Traditionally, the hill rice is mixed with boiled yams or sweet potato so it takes on a purplish or brown hue from the root vegetables. Nowadays, people use white rice. The mixture is then compacted well into a roundish shape. Linopot is very popular during the old days because villagers can easily bring their rice along to work at farm and jungle. However, it is not easy to find linopot nowadays but you can see them during festive celebrations such as wedding or Harvest Festival or a food gathering of Kadazandusun people. Losun Losun is one of the traditional dishes that travelers should try when in Keningau. Losun have less of a pungent taste than normal spring onions and is widely available in the interior jungles of Borneo. What makes this dish so special is how it is fried with bunga kantan or torch ginger buds, garlic chives, white chillies, garlic and white pepper, and sometimes anchovies. Not obtrusive on the palate, and a staple for those who have had it throughout their childhood, it’s an under-rated quintessential Kadazandusun dish. It is often had with linopot of wild rice, and hinava for a combination of all the best flavours. Losun can be found ready-to-eat at most of Kadazan coffee shops and Keningau weekly tamu. Basung Basung is just big-eyed scads; the same fish often used in pinasakan, but it is deep fried until they are crunchy. The fish is simply marinated and then fried. Dip into chili and lime juice and you can have the whole fish including the bones. Butod Butod refers to sago worms that are found feeding on the insides of the sago palm tree, a few months before they turn into beetles. It is said that these wriggly creatures that feed on the decaying pith of the sago tree is a solid protein source and is very nutritious. To eat it, you can pluck it straight from the tree, grab its hard head (to avoid eating it) and bite it off. Its insides will come bursting out, and has been described as “creamy” but not pungent or particularly foul. Some find the skin a bit chewy. 54
