Buttermilk Fried Chicken shake off excess and set aside on plate until ready to fry all pieces. Heat oil to 350° F in electric skilletMakes 6 servings or fryer. When oil is hot, add one piece of chicken at a time. Do not fry all pieces at once, but in smallMarinade batches. If using a skillet, fry until golden brown and juices run clear. Turn to brown evenly. If2 whole chickens, cut into pieces (breast, legs, using a fryer, breasts take approximately 8 min-thighs and wings) utes, thighs 6 minutes, legs 5 minutes and wings2 cups buttermilk 3 minutes. Once chicken is cooked through, place1 1/2 teaspoons kosher salt on platter lined with paper towels to absorb1/2 teaspoon cayenne pepper excess oil. Allow chicken to rest 5 minutes before1/4 teaspoon garlic powder serving. To keep your fried chicken warm until all1 teaspoon black pepper pieces are cooked, place fried pieces on baking1/2 teaspoon paprika sheet in oven set to 200° F.Breading Macaroni Salad2 cups all-purpose flour Makes 6 servings1 tablespoon kosher salt2 1/2 teaspoons black pepper Ingredients2 1/2 teaspoons garlic powder 1 teaspoon salt2 1/2 teaspoons onion powder 1 teaspoon dry mustard powder1 teaspoon paprika 3/4 teaspoon garlic powder1 tablespoon baking powder 1/2 teaspoon paprika 1/2 teaspoon onion powder6-8 cups peanut oil (peanut oil is good for high 1/4 teaspoon ground white pepperheat, but vegetable oil may be used) 1/4 teaspoon ground black pepper 3 cups elbow macaroniCombine chicken pieces with all of the marinade 1 1/2 cups mayonnaiseingredients in a large resealable bag. Seal bag 1/2 cup sour creamtightly and shake it until all chicken pieces are 1 (5 ounce) can evaporated milkevenly coated. Place in a bowl (in case bag leaks) 1/4 cup sweet pickle juiceand refrigerate overnight, or at least 4 hours. 1/2 cup finely chopped onionWhen ready to make chicken, remove from 3 tablespoons finely chopped red bell pepperrefrigerator and allow to sit for 20 minutes. 2 tablespoons finely chopped yellow bell pepperMeanwhile, mix flour, salt, pepper, garlic powder, 1/3 cup finely chopped celeryonion powder, paprika and baking powder in a 1/2 cup finely chopped carrotslarge bowl.
