Letter from the Editor Feeling Good My mom loved to dance. In her younger days, she danced with Debbie Reynolds. When she got older, she performed in musical productions for charity dancing the Charleston to in a flapper dress, parading to in an all American red, white and blue costume, and with top hat in hand, she kicked her way through a show stopping finale of from . She absolutely shined when she danced! She even took up Polka dancing with her friend Tish. One dance she never learned was the Tango. Ambrosia Salad 1 cup butter 3/4 pint heavy creamMakes 6 servings Salt and pepper to taste 1 dash garlic saltIngredients 1 dash nutmeg1 can triple cherry fruit cocktail 3/4 cup grated Romano cheese1 can pineapple chunks 3/4 cup grated Parmesan cheese1 small jar Maraschino cherries, cut in half Pink food coloring2 cups mini marshmallows2 cups Cool Whip topping Bring two large pots of lightly salted water to aShredded coconut (optional) boil. In one pot add 5 drops of pink food coloring. Add half fettuccini to one pot and half to the potPlace fruit cocktail, pineapple and cherries in with food coloring. Cook for 8 to 10 minutes orstrainer to drain for at least an hour to get most until al dente; drain. In a large saucepan, meltof liquid out. Combine fruit mixture with butter into cream over low heat. Add salt,marshmallows and Cool Whip, folding gently. Top pepper, garlic salt and nutmeg. Stir in cheesewith more cherries and serve chilled. over medium heat until melted; this will thicken the sauce. Mix two pasta’s together and addPink and White Pasta Alfredo sauce. Remove coloring to your boiling water priorfrom heat, add three drops of food coloring,mix and let cool completely. Squeeze both to adding your uncooked pasta.grapefruits yielding 1 cup of juice. Add If using multiple colors, use agrapefruit juice and sugar-water mixture intoblender. Blend well and strain. Pour into shal- separate pot of water for eachlow pan and freeze until firm. Or for an easier, more casual look, use pinking shears to cut your fabric. * We used fabric with a breast cancer theme for our napkins. Wooden Breast Cancer Favor Materials: ● Wood gift tags ● White-wash acrylic paint ● Pink ink pad ● Breast cancer ribbon rubber stamp ● Adhesive pink jewels Drill a small hole at the top of the wood gift tags. Paint tags with white-wash paint and let dry. Stamp breast cancer symbol onto tags. Add jewels. Tie onto napkins or place at each place setting.14 Fall 2016

Cucumber and Caviar Appetizer 6 tablespoons cold unsalted butter (cut into small pieces)Makes 4 servings 3/4 cup milk 2 eggsIngredients 2 tablespoons vanilla extract1 cucumber 1 1/2 cups chocolate chips1/4 cup ranch dressing White or clear sparking sugar (for topping)2 tablespoons caviarPeel and slice the cucumber into 1/4” slices. Preheat oven to 400°F. Line baking sheet withPlace a small amount of ranch dressing on top of parchment paper. In bowl, combine flour, salt,cucumber slice and top with small amount of sugar, and baking powder. Mix well. Add buttercaviar. and mix until you have a slight crumble to the texture. Confetti An Apple Crisp for Your Teacher In a glass jar layer the following ingredients: 4 tablespoons brown sugar 4 tablespoons quick-cooking oats 2 tablespoon flour 1/8 teaspoon salt 1 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg Seal jar with lid. Blueberry Streusel Coffee Cake ReaMakes 12 servings Preheat the oven to 375°F. To make Streusel: Mix sugar, flour, cinnamon, and salt in a smallIngredients bowl. Cut in butter, until it reaches a crumbly2 cups all-purpose flour state. Set aside. Lightly grease 8\" square cake2 teaspoons baking powder pan. Blend flour, baking powder, and salt to-1/2 teaspoon salt gether in a medium-sized mixing bowl. In a3/4 cup sugar separate bowl, beat together the sugar, butter,4 tablespoons butter egg, and vanilla. Alternately add milk and flour1 large egg mixture to the sugar/butter mixture, ending with1 1/2 teaspoons vanilla extract flour. Gently fold in blueberries. Pour batter into1/2 cup milk prepared pan. Sprinkle streusel topping over2 cups fresh or frozen blueberries batter. Bake cake for 40 to 45 minutes, until a toothpick inserted in center comes out clean.
