INTRODUCTION On the outskirts of the wine-growing village Gojinovac, in the Toplica Valley stands a striking ensemble of buildings amidst the endless vineyards: Toplicki Vinogradi Winery. Here, Toplicki Vinogradi have been producing wine since 2012. In 2009, Toplicki Vinogradi be- gan planting high quality vines on old, previously existing viney­ ards. It is vital for the grape to sustain its quality on the journey from vine to bottle. Therefore, pro­ duction was structured accordingly: The flow of the grapes is guided by the forces of gravity. An area of 42 ha currently operational, dedicated mainly to Prokupac, the autochthonous vine to southern Serbia. LOCATION Toplicki Vinogradi is located in Prokuplje municipality, southern Serbia. The Winemaking Plant is situated near the village of Gojinovac in close vicinity to the small town of Prokuplje, 280 km south of Belgrade. Vines cover a significant share of the southern side of the falling hills at 350 meters above sea level. Mild continental climate cond­ itions are ideal for grape growing and winemaking. Toplicki Vinogradi employs 30 workers as core staff, and in addi­tion offers short seasonal employment more workers during cut-and-maintenance and crops periods, which pos- itively affects income of the local communities. Our soils, never treated with pesticides allow for optimal con­ditions to grow native grapes, such as the ones used for regional wine Prokupac. Nevertheless, foreign sorts used for famous red wines including Cab- ernet Sauvignon and Merlot as well as white wines such as Chardonnay and Sauvi- gnon Blanc will also thrive in this environment. In summer, the regional climate results in sunny days and cold nights - further improving the quality of grapes harvested. Sur­veys of land stability have shown no risk of landslides, and explo­ration underground shows no subterranean water to be pres­ent. 3

VINEYARDS Ever since the times of ancient Rome, grapes have been cultivated through- out the mountains neighbouring the river Toplica and the outskirts of Prokuplje. Whilst some of these customs have been forgotten over the ages, there has been a resurgence of wine culture in recent years. Serbian wine is experiencing a renaissance, with wine-lovers from both home and abroad rediscovering what the land has to offer. Currently vineyards cover 42 ha, owned by the company. Flagship of the winemaker is the autochthonous Prokupac, a brand recog- nized worldwide. The company owns 115 ha of land suita­ ble for vineyards. Thanks to Prokupac and other red wines, Toplicki Vinogradi has become well known as a producer of top quality red wines, with certification of geographic origin (DOC). Our Prokupac Vineyards feature indigenous varieties, for which the region is well known. 5

WINERY The 9000 m2 winery is designed to complement the natural environment. Constructed into the hill itself, only a small part of the complex is visible from the outside. A circular base and continuity in cylindrical form above ground are crucial for production. Parallel rectangular forms and connective piping between elements are situated mostly underground. This results in a pleasing aesthetic quality without sacrificing functionality. The entire production process is designed to begin at the hilltop, where the Prokupac grapes are plant- ed and harvested and delivered by the iconic dome. Each step of the winemaking process takes us further downhill, with bottling and storage taking place at the lowest level. The buildings skeleton consists of iron and concrete. The dome is a ferroconcrete ribbed construc- tion. The side walls, mostly situated underground are also in ferroconcrete. Natural stone domi- nates the external aesthetic of the complex, complementing the environment. 8

Inside, modern materials such as glass surfaces and aluminium frames allow for function and beauty. Floors in the production areas are made of epoxy and ferroconcrete, whilst the museum and restaurant boast wooden flooring. The walls are concrete for the most part, with glass walls in certain indoor areas. Ther- mal insulation, glass and material used for facades are all carefully chosen to meet high standards in energy consumption and environmental impact. In total, the win- ery is rated a category C in energy consumption, with annual heating needs of 44,73 kWh per m2. The sewage and water systems fulfill all needs of a modern winery. Rain and waste water are both collected and purified externally, using separate systems. Electrical systems follow the given technical requirements. Lighting is util- itarian for the most part, with decorative lighting in sections such as the wine archive and barrel aging hall. The restaurant and museum sections are equipped with modern, energy efficient LEDs. Further technical installations also follow the principles of maximum efficiency and minimal environmental impact. Future installations in- clude geothermal pumps and catheters, chambers and coolers as well as solar panels. These measures will all save energy and lower CO2 emissions. 10

THE PROCESS Grapes arrive at the inception hall, where they are cooled to 6 °C. This is necessary to protect the grapes from undue fermentation. Initial grape processing is conducted, including stum-analysis, cleansing and fermentation. The wine-making plant takes full advantage of the architecture, with gravity guiding the entire production process from the top down. This is highlighted within the architectural design cuts below and floor descriptions. Toplicki Vi- nogradi cultivates and processes a large variety of both white (Sauvignon Blanc, Chardonnay) and red (Prokupac, Cabernet Sauvignon, Merlot and Pinot Noir) grapes of the highest quality, using the most modern wine- making techniques and technology. Our specialty, and biggest pride are of course the Prokupac grapes. An autochthonous variety, typical to southern Serbia and of immense historical importance to the Prokuplje Region. Nigh forgotten, Toplicki Vinogradi is on a mission to return Prokupac to former fame and glory. 11

EPIGENIA PROKUPAC About the Wine Grape variety: Prokupac Alcohol content: 13% vol Bottle volume: 0.75 L This wine is ruby red with shades of purple, with a very intense, consistent and jammy aroma of black fruit. Aromas of ripe cherries, sour cherries and currants stand out, complemented by vanilla and tones of sweet spices with beautifully incorporated notes of oak. Ham, prosciutto and aged cheese, red meat dishes, barbeque, roasted lamb, venison. Geographical indication Central Serbia Perfect drinking temperature: 16 - 18 ºC 15

EPIGENIA MERLOT About the Wine Grape variety: Merlot Alcohol content: 13% vol Bottle volume: 0.75 L Very intense red color. A fresh taste of currant and black mulberry on the nose, followed by a delicate scent of dry plums, tobacco and coffee, accentuated by notes of oak. Grilled red meat, hard cheeses, roast lamb or mutton. Geographical indication Central Serbia Perfect drinking temperature: 16 - 18 ºC 16

EPIGENIA CABERNET SAUVIGNON About the Wine Grape variety: Cabernet Sauvignon Alcohol content: 13,5% vol Bottle volume: 0.75 L With an intense dark red color, this wine has a full, structured body with a strong fruity character. The aromatic complex is dominated by tones of ripe cherries and blackberries which are followed by a typical note of white pepper with a bit of dark chocolate. Leaves a rounded and full aftertaste with gentle and sweet, well-composed notes of oak. Red meat, roasted lamb and beef, steak, as well as chocolate-based desserts. GVOZDENI PUK (IRON REGIMENT) About the Wine Grape variety: Cabernet Sauvignon, Merlot Alcohol content: 13% vol Bottle volume: 0.75 L This wine is blend of Cabernet Sauvignon and Merlot. Ruby red color with a brick color reflection. The aromas consist of red berries, currant, spices, coffee and dark chocolate followed by a discreet note of oak. The wine is extractive, full-bodied, with harmonious tannins, rounded and balanced, with long and pleasant after- taste and great potential for aging in the bottle. Red meat, venison and aged cheeses. Geographical indication Central Serbia Perfect drinking temperature: 16 - 18 ºC 18

TRIBUS VILLA PINOT NOIR About the Wine Grape variety: Pinot Noir Alcohol content: 14,5% vol Bottle volume: 0.75 L A complex wine with a profound ruby red color aged in barrique. Aromas of dried fruit, truffles, violets, whilst being velvety and elegant, with a fruity scent of strawberries and raspberries. Accentuated with gentle tones of oak. Roast pork, lamb, red meat dishes, duck, turkey, light pastas, semi-hard cheeses, salmon. Geographical indication Central Serbia Perfect drinking temperature: 16 - 18 ºC 19

EPIGENIA CHARDONNAY About the Wine Grape variety: Chardonnay Alcohol content: 13,5% vol Bottle volume: 0.75 L With a color reminiscent of hay and well-balanced acidity, this fresh and min- eral-driven wine has a fruity aroma that reminds oneself of pears, figs and ripe vineyard peaches, with a buttery finish and soft tones of tropical fruits in the background. White meat with creamy sauces, fried camembert with cranberries, risotto, soft cheeses. Geographical indication Central Serbia Perfect drinking temperature: 10 - 12 ºC 20

EPIGENIA SAUVIGNON BLANC About the Wine Grape variety: Sauvignon Blanc Alcohol content: 14,5% vol Bottle volume: 0.75 L Light yellow color. Very ripe and flamboyant on the nose, with dominant aromas of melon and ripe peaches. Full and harmonious body, balanced acidity and a long and pleasant aftertaste that carries citrus tones. Grilled mussels, stuffed zucchini, grilled asparagus, trout, grilled goat cheeses, perch in sage sauce, schnitzel. Geographical indication Central Serbia Perfect drinking temperature: 10 - 12 ºC 21

PRKOS ROSE About the Wine Grape variety: Merlot Alcohol content: 14,5% vol Bottle volume: 0.75 L This wine has an attractive pink color. Lively, crispy, refreshing and with well-bal- anced acids. Leaves a delicious floral aftertaste that invokes a bouquet of fresh roses. Prosciutto, pasta bolognese, fried fish, smoked salmon, turkey, desserts with berries.
