Lay on plate lined with paper towel and set aside. Add the cleaned and cut potatoes to a large pot and cover with water at least 1\" above the potatoes; add 2 tbsp kosher salt. Bring to a boil, then reduce heat to a simmer and cook until potatoes are fork tender; about 10 minutes. Meanwhile, make your dressing. The trick is to add your dressing while the potatoes are still warm so they can absorb more flavour. In a large bowl add the mayo, champagne vinegar, Sunshine Blend, sweet relish, mustard, diced red onion and capers; mix well. When the potatoes are done, drain them. And while potatoes are still hot, toss in the dressing and mix thoroughly. Add in the bacon and parsley, fold in until combined. Enjoy!

maple Jerk kabobs with Pineapple recipe by paul hill (@hillsjamaicanjerksauce) I N G R E D I E N TS : INSTRUCTIONS: • 6 boneless, skinless chicken 1 Pour 2 tbsp olive oil over chicken, add thighs or 2 chicken breasts jerk seasoning, jerk sauce and mix in evenly. Beat on medium for 1 minute, then increase speed to high until stiff peaks form. Place meringue nests in a plastic bag and crush until desired size. Pour meringue pieces into whip cream and mix until well combined. 2 In a medium sized bowl, combine your blueberry jam and fresh blueberries. Mash until well combined. 3 Zest half of your lemon and cut remaining half into thin even slices. 4 In individual, clear glasses, carefully layer your lemon curd, whipped cream and meringue mixture, and blueberry jam until the cup is about ¾ full. 5 Garnish with lemon slices, lemon zest and blueberries. A REFRESHING • 0.75 oz creme de cacao FATTOUSH WITH LOADS OF FLAVOUR AND • 0.5 oz Pete's freshly squeezed orange juice TEXTURE. ENJOY IT FOR LUNCH ON A NICE • 0.5 oz lemon juice SUNNY DAY, OR HAVE IT AS A SIDE TO YOUR • 1 tsp chili oil SUMMER BARBECUE MEALS. • 100g frozen mango chunks SALAD BASE: TOOLS YOU’LL NEED: • 1 head romaine lettuce, chopped • Jigger or measuring tools • 6 radishes, half-circle slices • Weighing scale • 1 English cucumber, quarter-circle slices • Your favourite drinking glass • 3 medium tomatoes, deseeded & diced • Straw • 1 green pepper (or bell pepper), diced • Blender • 1/2 bunch curly parsley, finely chopped • 3 stalks green onions, thinly sliced INSTRUCTIONS: • 2 small pitas, chopped 1 Add all ingredients into blender • Spray oil 2 Add 100g of ice cubes DRESSING: 3 Blend until desired texture is achieved • 1/4 cup Pete’s Own extra virgin olive oil • ¼ cup lemon juice 4 Pour into your favourite drinking glass • 1 tbsp pomegranate molasses • 1 tsp apple cider vinegar 5 Garnish with orange slices • 1 tsp za’atar • 1/2 tsp sumac 6 Enjoy! • 1/4 tsp dried mint • Pinch of salt - adjust to taste • Pinch of cayenne pepper - optional I N ST R U C T I O N S : 1 Start by prepping pita. Cut into ½ inch squares. Spray with oil and place in air fryer at 400˚F for 5 to 7 minutes, or until crispy. 2 Wash the vegetables thoroughly. Pat dry and place in large bowl. Toss to combine. 3 Add all dressing ingredients into a mason jar and shake to combine. Store in fridge until ready to serve. 4 Pour dressing over salad and stir until well combined. Top with crispy pitas and enjoy!
