HISTORY”Winemaker” is the accepted translation of “vigneron”. However, Henry FrédéricRoch and Yannick Champ certainly don’t consider themselves wine “makers” assuch. The vigneron is not someone who simply makes a product, he manages anatural process. This French notion of “managing the vineyard” means that theyare not so much directive and controlling, but rather listening to and nurturing thevineyard and its terroir through each season, in order to achieve the best they canunder given conditions, not to manufacture wine, but to husband the vines and fruitto maturity, to manage the fermentations out of which the wine is born.The German philosopher Martin Heidegger, who during the second part of his lifeconstantly referred to the Tao and Zen Asian philosophies, described the essenceof freedom as “letting beings be”. HISTORYDomaine Billard has approximately 12.5 hectares of vineyards in different appella-tions throughout the Cotes de Beaune. Their largest holdings are in the HautesCotes de Beaune with other small plots located in Saint Romain, Saint Aubin 1erCru, Auxey Duresses and Beaune.The domaine passed from father to son recently and Jérôme Billard has brought anew philosophy to his family domaine. Farming is done with respect for natureand follows the principles of organic farming. Yields are kept low through the useof cover crops and severe pruning and all the vines are harvested by hand. Onlyindigenous yeasts are used for the fermentation. Jérôme’s father sold his wine tothe local cooperative but Jérôme is now estate bottling his entire production. HISTORYAmong the best pioneers of the Côte-d’Or are Robert Jayer-Gilles and his sonGilles. Robert is a native of Vosne-Romanee and a cousin of the great Henri Jayer.He started his career in 1948 as an apprentice working for Andre Noblet, the thencellarmaster at the Domaine de la Romanee-Conti.Robert retired in 1997 and his son, Gilles Jayer, who started working with his fa-ther in the 1980s, took control. His vineyards are planted at the same density,10,000 vines per hectare, as on the Côte proper. This is unusual in the HautesCôtes where more than 90% of the appellation is planted at less than half this den-sity, as is the Jayers, practice of harvesting by hand.Gilles Jayer took over from hisfather, Robert, in 1998 and continues to produce fantastic wines, collected aroundthe world. The grandson of Henri Jayer, one of the most respected Burgundy pro-ducers, has been absent from the UK for a number of years until now. Best knownfor his Echezeaux, Gilles puts the same amount of dedication into all his winessetting high standards in both red and white wines from the Hautes Cotes. HISTORYAlthough, for over a century the Estate has been an established element of Burgun-dian history, its origins can be traced back to the south-west of France, and morespecifically to the Tarn and Garonne. It fact it was in Valence-sur-Agen that Jules Joseph Barthélémy Lafon was bornon March 29th, 1864. His father, Charles Lafon was Land Registrar in the area andlater in the Pyrenees.The varied interests of Jules Lafon included: Amateur art collecting: engravings;tapestries, including Aubusson; furniture, including Boule; coins; medals; Chineseminiatures. HISTORYVisiting Domaine Ramonet was always going to be something of a personalpilgrimage. Ramonet’s wines were among of the first white Burgundies to grabinitiating a fascination which has only deepened over the years that followed.The domaine’s wines exhibit a rare amalgam of amplitude, depth and precisionwhich always makes an arresting impression. Simultaneously full and firm, theRamonet style differs from the aesthetic pursued by many of today’s mostcelebrated white Burgundy producers; and though blind tasting notoriously turnsup surprises, it’s hard to imagine anyone confusing, say, Ramonet’s Bâtard-Montrachet and Roulot’s Meursault Perrières—though in the grander scheme ofthings these are of course comparatively fine distinctions. HISTORYThe Domaine Géantet Pansiot in Burgundy is currently run by Vincent Géantet,who is the third generation of vignerons in his family, though the vineyards andeven winery buildings have changed with each new generation, as a result of inhe-ritance laws covering a widespread family. His daughter, Emilie, continues thetradition having set up on her own while son, Fabien, has been working alongsidehis father since the age of 12. Edmond Géantet began domaine bottling in 1955.Vincent joined his father in 1977, taking full charge in 1989.
