SPICED PUMPKIN SCONESSweet and delicately spiced, these pumpkin scones use wholemeal flour and no refined sugar. Crispon the outside and fluffy on the inside, serve these scones warm with melting butter and a drizzle of honey, and embrace the cooler autumn days. This recipe makes 6 small scones. HEALTH BENEFITS OF PUMPKIN: Pumpkins contain a high concentration of beta-carotene which is an antioxidant that helps to protect against cancer. Beta-carotene is converted into vitamin A in the body which is essential for healthy skin, good eyesight and a strong immune system. INGREDIENTS • 180 g wholewheat flour • 1 ½ tsp baking powder • ¼ tsp salt • 1 ½ tsp cinnamon • 45 g butter • 115 g pumpkin puree • 40 mls pure maple syrup • 50 mls milk METHOD 1. Pre-heat oven to 225°C 2. Sift the flour, baking powder, salt and cinnamon into a medium sized bowl.3. Add the butter and either rub in using your fingers or pulse in a food processor until the butter is incorporated fully. 4. In a separate, large mixing bowl, whisk together the pumpkin puree, milk and maple syrup. 5. Stir the flour into the pumpkin mixture and mix until just combined. Be careful not to overworkthe dough or the scones will become tough. As soon as the dough comes together, tip onto a lightly floured surface. 6. Gently press the dough into a 1 inch thick round and cut out using small scone cutters.7. Place the scones on a lightly greased baking tray and bake for 12-14 minutes until golden brown.
