RIGHT ON! ACTIVITY BOOK 10 AUGUST 2020

Hello to all our Groovy Friends!!! h’70 S ’80 S This Activities Fun Book is remembering the 70’s and 80’s!!! Wait you mean they are gone? Not with all of our cool residents around. You keep things fun and hopping with us. From water gun fights, to donut drives, root beer float, ice cream bars, rubber duck races, bingo, many virtual games on mailchimp and even potato bakes. We have had movies, puzzles, book clubs, virtual cooking classes, wine tasting class, aqua bikes, wine and sip art classes. This has been a busy summer!! I wonder what our friends did back at there homes during Covid?? ;-) We have been chillin trying to put together an awesome final Activities Fun Book!!! We hope that you kind of did “Dig It!!” we tried to keep things fun and “Far Out” with all the crazy stuff going on! You all are “Lookin Good” and passing the time with us. We truly appreciate all of your support as we stomped thru this together. Man it’s hard to talk like we did in the 70’s!!!!! Truly we are so grateful for you, this has been a summer we all want to put behind us and move forward. But it is the middle of August and we are going to be beating this heat soon and preparing for our friends return!! That will be Cool Man!!! Your Activities Directors are working on getting the fall ready and your September Newsletter ready for you with some of the things that will be happening. Not every- thing is set in stone, but we have a Plan A- Plan B- and a Plan C. We hope you have enjoyed your Fun Books, we truly enjoyed doing them for you. Cowboy Caviar By Sara Welch at www.dinneratthezoo.com This cowboy caviar is a colorful and hearty dip that's loaded with beans, avocado and veggies, all tossed in a zesty home- made sauce. It's the perfect make-ahead dish for a potluck! Prep Time 21 minutes Servings 8 Ingredients  1 can black beans rinsed and drained  1 can black eyed peas rinsed and drained  1 cup tomatoes seeded and finely diced  1 jalapeno seeded and finely diced  1 cup corn can be fresh, canned or thawed from frozen  3/4 cup red and/or orange bell pepper seeded & finely diced  1/2 cup red onion finely diced  1/3 cup cilantro leaves chopped  1 avocado chopped  1/3 cup olive oil TIPS FOR COWBOY CAVIAR  1/4 cup lime juice  Can be made 8 hours before you plan  1 tablespoon honey to serve it, just omit the avocado, & stir  1 teaspoon chili powder it in right before serving.  1 teaspoon cumin  Serve either as a dip with tortilla chips,  salt and pepper to taste or as a salad over lettuce. Instructions 1. Place the beans, black eyed peas, tomatoes, jalapeno, corn, avocado, bell pepper, onion and cilantro in a large bowl. 2. In a small bowl, whisk togeth- er the olive oil, lime juice, honey, chili powder, cumin and salt and pepper. 3. Pour the dressing over the bean mixture and toss gently to coat. Mackles'more Cookie By Robin Martin of “Hello Robin” Cookies Prep Time: 2 hrs 10 mins Servings: 36 cookies Ingredients  2 3/4 cups all-purpose flour  1 teaspoon ground cinnamon  1 teaspoon kosher salt  1 teaspoon baking soda  3/4 cup unsalted butter  1 cup packed light brown sugar  1/2 cup granulated sugar  2 large eggs  1 teaspoon vanilla extract  4 oz dark chocolate (70%), cut into chunks, or 3/4 cup of dark chocolate chips  1 cup packed mini marshmallows  36 square-sized store-bought graham crackers  7 1/2 ounces milk chocolate squares, halved Instructions 1. Line two baking sheets with parchment paper. 2. Whisk together the flour, cinnamon, salt & bak- ing soda; set aside. Cream the butter, brown sugar & granulated sugar on medium-high speed until pale and fluffy, about 3 min.. Add the eggs, one at a time, at medium speed for 15 seconds after each addition. Peanut Butter Protein Bites By Shannon Sargent @cleaneats_cleantreats These are a yummy HEALTHY snack! They freeze well, or just stay in the fridge. Oh, and they are delicious! 2 c. old-fashioned oats 1 c. peanut butter (chunky or smooth) 1/2 c. unsweetened shredded coconut 1 c. mix-ins (mini choc chips, dried fruit, nuts, etc.) 1 scoop vanilla protein powder 1/8 c. wheat germ 2/3 c. raw local honey 2 Tbsp. chia seeds I use my Bosch with cookie paddles to mix it all up, but the first time I just used a bowl and spoon and that worked great too. Roll into ping- pong ball-sized balls. I used my cookie scoop and then just finished off the ball shape. Put in fridge/freezer in airtight container or ziploc bag. Strawberry, Watermelon and Arugula Salad By Scarlett Banks of www.madeitateitlovedit.com ingredients 8 cups arugula/spinach blend 3 cups seedless watermelon, in balls or small squares 3 cups strawberries, sliced 1/4 red onion, thinly sliced 1/2 cup goat cheese, crumbled 4 oz pistachio nuts, shelled dressing: Instructions: 1/2 cup olive oil Whisk dressing ingredients together 1/4 cup balsamic vinegar and then serve over salad 2 t honey This salad is easy, refreshing and so, 1 T minced garlic so delicious!
