On my last visit, not long before lockdown, I explored Tasmania, a scenic island off the south coast, which looks more like Scotland than Australia. The waterside capital, Hobart, is a gastronomic gem, with innovative new restaurants attracting foodies such as Nigella Lawson – we saw her eating at the table next to us one evening. It’s also home to MONA, the mind-blowing Museum of Old and New Art, which has been built into the cliffs just a short ferry ride from the city, as well as the now-endangered Tasmanian devil. More than 80% of Australia’s wildlife can’t be found anywhere else on earth and the novelty of watching kangaroos hopping nonchalantly across outback roads never fades. I’ve seen flying fox fruit bats stretch out their wings to cool down at dusk, grey koalas munching on eucalyptus leaves in the wild and hundreds of little penguins on Phillip Island waddle from the ocean to their burrows. Thankfully, I’ve not seen so many of those big hairy spiders!
