Place a steamer basket in a big pot with water, enough to touch the artichokes but not to cover them. Add some salt & pepper to the water, place the artichokes in it, cover it and set the fire on medium high. The cooking time depends on the size of the artichokes, but 20-25 minutes would do the trick. My dad uses a presure cooker, and it takes 15 minutes to cook the artichokes to perfection. While that cooks, melt the butter in a small bowl and add a squeeze of the lemon. Place some mayo in a small bowl and set aside. With help from an adult, remove the artichokes from the pot and place them on a strainer.

Sourdough Bread By Canon Strong Have you ever had sourdough bread? You might be wondering about the recipe. One part of the recipe is the starter. Just so you know the starter is alive. We made a loaf of bread on the day before Halloween at my house. I do not know how the starter was made because it was made before I was even born. I do know it’s still alive today and we use it every time we make bread. After we use it, we have to feed it more flour and water. A sourdough starter can live for up to hundreds of years. My mom is the one who makes the sourdough bread and starter. My mom has been making it for longer than I have been alive. My whole family eats the bread and sometimes we bring it to our church. My favorite topping for the bread is butter. My favorite way to eat it is right out of the oven except it’s too hot sometimes. “How long until it’s done?” is a question we ask my mom a lot. I chose this recipe because it is special to my family and especially my mom. When you make this, I hope you think about how good it tastes. By Canon Strong 102

Strong Family Sourdough Bread Recipe 150 g “well fed” starter 500 g bread flour 250 g water 9 g salt Place starter, flour and water into the glass bowl of a stand mixer with the dough hook attachment. Turn it on to level 2 and let it mix for about 2 minutes. Let it sit for 5 minutes and then add the salt and turn the mixer onto level 4 for 5 more minutes of kneading. (This can all be done by hand!) Cover and let it rise for 8-12 hours, until it’s double in size! Form it into a boule, baguette, or whatever shape you like and let it rest one more time while the oven preheats to 425 degrees (or for up to 1 hour). Score the bread right before baking using your favorite pattern. First, I was at my last football game of the season for my flag team. Next, we lost our game 16 to 30 and it was my birthday that day! Then my team was crying and singing happy birthday to me at the same time and I cried all over the cupcakes. Last, my mom brought me home and she whole world will know about Brussels sprouts made me Brussels sprouts with lemon and with lemon and melted cheese, even other melted cheese. Finally, I was happy and I went countries. Maybe even people in Alaska will to bed dreaming of the Brussel sprouts with hear about this recipe. I do not think people still lemon and melted cheese that my mom made live in Alaska but maybe the people that live in me. ESQUITES By Ezra Rivera I was at school when my mom picked me up from after care. On our drive home she told me she was going to cook something delicious for me. When I got home, I saw corn boiling and it was popping. I went to the living room and watched tv for 30 minutes. My mom called me to the kitchen and she said, “How much cheese do you want?” “A lot”, I responded. Once she was done, she gave me the bowl of esquites. It had corn, mayo ,cheese and crushed hot cheetos. I smelled corn and mayo. Once I got my spoon, I scooped a large scoop of esquites and put the spoon in my mouth. I yelled “hot!!!!!” I waited 2 seconds and then I tried eating it again. I loved it! Although, it was quite messy. My mom said, “Would you like to know what this is?” but I kept eating. My mom said, “It’s called Esquites.” Seven days later, I asked, “How do you make Esquites?” My mom told me it is boiled corn with cheese, mayo, chips and hot sauce if you prefer. Since then, my mom and I have started making this recipe together. Sometimes we change the type of chips that we use as our topping. I like cooking this recipe with my mom. This recipe also reminds me of my dad Andrew because he once made it for me. Eating esquites has also taught me that I should always try different food that I don’t know. I hope you like esquites. Remove the corn to a large bowl and add in the mayonnaise and cream. You can add more if you desire a creamier texture. Serve warm in a large bowl or in individual cups. Top with desired toppings! Grandmother’s Secret Recipe By Gia Lightner I was in my room playing MINECRAFT when I smelled my favorite steamed broccoli. I turned off my computer and went to the kitchen to check if it was steamed broccoli. It was! I asked my grandmother, “Can I have some?” She said, “Yes.” So I went to the dining table waiting for my food. When I got my food, I got my fork and I ate my broccoli. The Best Super Spicy Green Salsa On Earth!! By Juan Cruz Have you ever heard salsa blending? One time my family was blending salsa and when I heard it, I said, “It’s super loud! Turn it down! I can’t sleep! It’s 7a.m.!” Well, let me tell you about the time my family was making green salsa. My mom, dad, and brother made green salsa in my kitchen at my house. We were going to have tacos for dinner, so that’s why they were making salsa. Here’s how my family makes the spicy green salsa. First, we wash our hands. Next, we boil 2 cups of water. Then we add 5 green tomatillos, 1 jalapeno (don’t forget to remove the seeds from it if you don’t want it to be spicy!). Once they are done boiling in the water, we let them cool down for a bit. Then we put it in a blender with two cloves of garlic and add a small piece of white onion. We also put in 3 cilantro bundles and salt to taste. Then we were ready to blend it all at a slow speed. Now our salsa is ready to eat! My family likes to add this salsa to our tacos. My family got the green salsa recipe from my Great Grandmother. I want to share this recipe with others because it’s super good and if you are from Mexico, it’s even better because the salsa is from Mexico. I hope you make it and try it. It’s super good. The Spiciest Taki Dip!! By Julien Reynoso Have you ever tried the spiciest chips ever? Takis - they’re especially good with taki dip! Takis are the spiciest chips in the world! My dad my sister and me, we all like takis. But my mom thinks they are too spicy. She still buys them for me though! Let me tell you about how my cousin Isabella and I came up with Taki dip. One day, I was at my house and it was noon and my cousins were there and some of my mom’s friends were there too, and we were having a lot of fun in the backyard outside on the jumper. My mom and her sister were watching us, they were eating chips and salsa, we made the salsa. My cousin Isabella and I were having fun and we got hungry for a snack. I didn’t know what Isabella was making and I saw her mixing something. I went over and asked, “What are you doing?” Isabella said, “If chips can have salsa, Takis can have dip too!” She was making Taki dip for us. It started with sour cream, and a ranch seasoning packet that we stirred together. Then we added lemon and sriracha mayo. Then I dipped my taki in it and it was really good!! Takis are really spicy hot, the dip is cool and redish-orange. They are crunchy and if you eat too many, your fingers will turn super red! Now whenever my cousins come over, Isabella and I like to re-make our recipe for Taki dip and try it with new foods like fried shrimp and cheeseburgers. We call it our secret sauce!! When we came to my nana’s house she said, “Thank I love eating brookies with my family at the table. I love smelling you for coming over”. I said, “You’re welcome!” brookies and hearing them sizzle in the oven being baked. I love and we all went in the house and my nana made that when my nana makes brookies I can smell them being baked brookies. They are half cookie half brownie. It tasted and it was so great to see them after I smelled them. It was just like very good and I said, “Yum!”. I said, “Mmmmmmm” a dream. The brookies were really hot and really really sugary and because the brookies were great and I loved them sweet and there are chocolate chunks that are melted. They make a lot and it’s the best thing in the world. My family you want more of them and they’re the best thing in the whole said, “yum!” because it tasted very good. Me and Dad were at our house, my baby brother was sleeping, but it was my Mom’s birthday! So we are going to make her special cake. We got the ingredients out and started making the cake. While we were making the cake, we poured in the sugar but we weren’t sure if it was the right sugar? So we texted Mommy to see if it was right. About five minutes later, we got a text from Mom saying it wasn’t right. So we had to start over. We put in the flour and sugar and a bunch of other ingredients. In a hour later we were done. I said, “Ok now, it’s time to make the frosting.” Dad said, “How long will that take?” I said, ”About an hour.” So we made the frosting and then we heard the door open. It was Mommy. We cut the cake and went into Moms room and ate it. The cake was delicious and it smelled fresh. It tasted like chocolate and it made me happy! We got the ingredients from Sprouts. First we made the brownies from the directions on the box. Then we made the frosting by taking out the sprinkles, powdered sugar and huckleberry jam. We got the butter and powdered sugar and mixed it together. Then we put the sprinkles in the bowl. Last, we put huckleberry jam and mixed it together. Paxton’s Christmas Cookies By: Paxton Tamyo Have you ever tried my grandma’s Christmas sugar cookies with red and green sprinkles? If NOT your missing out! Whenever my grandparents visit we always make my great- grandma’s sugar cookie recipe. When I’m visiting my grandparent’s house in Las Vegas during Christmas holiday my grandma always spends time teaching my brother and I how to make the best cookies ever the same way she used to teach my mom. First, she mixes the dough. The dough was so sticky that we couldn’t even get it off the cutting board. We tried our best and then we had to use a knife to lift it off. Then, she lets my brother and I use cookie cutters to make shapes. There was a santa shape, a present shape, and a reindeer shape. I chose all of them. After we cut the shapes out my grandma says, “Don’t forget the red and green sprinkles!” Next, we put white soft flour on the pan and put them in the oven. They bake for 7 minutes until they turn the right color and smell so yummy. When they come out of the oven we let them sit on the counter and cool. My brother said, “those cookies look so good!” Well if you are not excited yet, get ready! Now here comes the best part, I get to have a cookie and see how they taste. If they taste burnt, then we have to do it all over again. I chose this memory and recipe to add to our cookbook because I make it every year with my grandparents when we visit them. A few days before Christmas our family comes over to eat Christmas dinner, exchange gifts and listen to my Dad read The Night Before Christmas. “I am super excited for our party tonight!” I said. “Me too,” said my Mom. Fudge is kind of like firm chocolate pudding. It is kind of just smashed and melted chocolate. It’s really really good! Hmm… I wonder who invented fudge? Well anyways... When my Mom and I were done making the fudge, we set up the table. Then the guests came. My cousins and I played until dinner. “Girls! Come down for dinner!” my Mom called. “No,” I whispered. My cousins went downstairs. “Fine,” I say. I barely ate any of my dinner because I wanted all of the fudge that I could possibly eat. Maybe I could eat the whole wide world of fudge. Wait then no one could help me make fudge. Then I would be sad, but anyways... The first time my mom learned how to make fudge was in 1976 when she was 8. Great Grandma Meinert loved to cook! We still have her cookbook from a long time ago. But Great Grandma Ross did not like to cook as much. But she loved to make fudge! I do not like nuts that much. But Great Grandma Ross made fudge with walnuts. Now my Mom and I make it without walnuts. We like to make fudge with semi sweet chocolate, vanilla and Marshmallow fluff. It hid under the table at dinner and ate food scraps that fell under the table as all dogs would. After dinner, Patricia brought out a platter with something circular and brown. Layda reached over and ate one. I asked her if it was good. She didn’t answer because she was too busy chewing the thickness. Now, I wanted to try one, so I ate one!!!!! They were shaped like a ball. It tasted like chocolate and Nutella at the same time. AND I LOVED IT!!!! I ate nearly every single one of them! But Marcelo and Layda were stuffing them in their faces, too. Chocolate Chip Cookies By: Nico Di Tillio Have you ever tried chocolate chip cookies with a sprinkle of sea salt? It tastes good! This story is about me and my mom making chocolate chip cookies. It first started with me having the idea. I said, “Let’s make chocolate chip cookies.” We got all the ingredients. My mom taught me how to crack an egg. I remember when I put the flour in the mixer, flour went everywhere “Ahhhh!” I said as flour went on my face. After that I laughed. We mixed all the ingredients together and added chocolate chips. We got out the baking sheet. We formed the uncooked cookie dough into little clumps and put them on the baking sheet. We moved the baking sheet into the oven. We set the timer on the oven for 20 minutes. I was excited because I have a sweet tooth the size of the world! I asked my mom, “Do you know any jokes?” She said, “I know some, but you will like this one. What is a monkey’s favorite cookie?” I said, “I don’t know.” She said, “Chocolate chimp!” I laughed. The timer rang. Ding, ding, da-ding, ding! The cookies were ready. My mom said I could have two cookies. I ate my first cookie quickly. When I was eating my second cookie, I was not paying attention and my dog ate it out of my hands! I chased him throughout my house. I kept chasing him until I ran out of breath. We had run out when we made the pictured cookies so I used a combination of pink Himalayan and kosher sea salt.) *If you have the time, freeze the cookies for approximately 30 minutes. My aunt said, “Don’t swing around the glow sticks because it can fly out of your hands and hit someone or fly in the fire or it could crack.” The bigger kids, like me, were collecting wood or just sitting on a chair talking and looking at the little fire as it grew and grew. Soon, it was gigantic! Then the little kids were monkeying around and my dad said, “Can you please stop bothering me?” Then the little kids said “Okay!” As we waited for the bonfire to calm down, the little kids started to play Wax Museum while me and the older kids played Mission Impossible. To play Mission Impossible, you need a flashlight. First everyone goes to the starting line and your goal is to get to the finish line without the flashlight pointing at you. When you get the flashlight on you go back to the starting line. Me and my friend Johnny were almost there but then the flashlight pointed at us and we had to restart. Then my brother touched the gate then he won and we played again. When we played again, I won! Then my brother and Johnny’s sister, Maddy, went to get the roasting sticks to roast marshmallows. When they came back we roasted our marshmallows like this: First you put it on the roasting stick. Then you put it on top of the fire and wait for it to get sticky and toasty. Mom’s Recipe for the Greatest Cookies! By: Sterling Ron Have you ever made oatmeal cookies? Well, if you haven’t, you should because they are delicious! This is my story of making oatmeal cookies. I was on the couch watching TV when I said, “Can we make oatmeal cookies?” My mom said “Yes”. “Yay!” I yelled. We went to the store to buy oats. When we got back home we went into the kitchen. My mom got out the ingredients: vanilla, oats, and eggs. My mom gave me the ingredients and I mixed all the ingredients together and turned on the mixer. I set it to the right speed and my mom cracked the eggs and added them to the bowl. I could hear the mixer mixing the ingredients. After I mixed all the ingredients and the batter was made my mom put the batter into round shapes on a pan and put them in the oven. I walked out of the kitchen and went into the living room sat back on the couch and continued watching TV. While the cookies baked and cooled, I asked my mom if I could try the cookies. My mom said yes. I ate an oatmeal cookie and it tasted great! That’s my story of how I make oatmeal cookies. My PawPaw Gabe’s Chocolate Chip Cookies By By: Jackson Rossi Chocolate chip cookies are so good! Wait, you haven’t had chocolate chip cookies!? You should try my recipe and enjoy. I love to make chocolate chip cookies at my house and at my PawPaw’s house. I make them with my mom, dad, sister and my PawPaw Gabe. One day I was over at my PawPaw’s house and I was sitting on the couch with Gunner, his Rhodesian Ridgeback dog. Then PawPaw called me, “Jackson, do you want to make some chocolate chip cookies?” “Yes!” I said feeling excited. So we get the ingredients out. Next, we set the mixer to Level 2. Ok. “Let me add some of the ingredients” I said to PawPaw. Next I put the cookies in the oven. In 12-15 minutes later I smelled the cookies from the oven. “Ooh, it smells so good and sweet that you want to eat all of them right away! That means, they must be ready! Let’s have some Chocolate Chip Cookies!” This recipe comes from the BEST baker in the world, my PawPaw Gabe. I’ve been making chocolate chip cookies for a very long time. When ever I make chocolate chip cookies, it reminds me of spending time with my family. If you try my recipe, I hope it reminds you of being with your family too. Ingredients: An ice cream scoop can work well for getting a good amount of dough for 1 cookie. 2 ¼ cups all purpose flour Or you can just pick up a small piece of dough, about the size of a golf ball, with 1 teaspoon baking soda your hands. 1 pinch of salt Bake in oven (preheated to 350*) for about 12-15 minutes. Set a timer & check on 1 ½ sticks unsalted butter, at room temperature (take out of fridge for ½ hour them often, with the door closed so you don’t let the heat out. Throw away shells, set aside & wash your hands with soap & warm water again. In the Stand mixer, add butter, brown sugar, white sugar & vanilla. Mix at Med- High speed until combined. Then add eggs & slowly mix (Low, then Med speed) until well incorporated. You don’t want to mix too much. Turn the mixer on low & slowly add dry ingredients (from the bowl you set aside earlier) to the wet ingredients in the mixer bowl. Mix on low until a dough forms & you don’t see anymore flour in the bowl. Scrape down sides of bowl with a spatula occasionally,
