The Legend of the Secret Taco By: Jack Doyle Have you ever heard of the legend of the secret taco? You might be wondering what the legend of the secret taco is. It all started when the oven timer went off, beep, beep, beep! My mom said, “Go get the chicken out of the oven.’’ I rushed to the kitchen and I put the glove on. I opened the oven and pulled the chicken out. I set the chicken on the counter. Then my mom got one big plate and four smaller plates. She put them on the counter. Then my mom said, “Go get the lettuce, tomatoes, cheese, salsa, and tortillas.” I said, “OK!” I went to get the taco fixings out of the refrigerator and then I put them on the counter. Then we got a knife and cut the tomatoes in half. We cut the lettuce into smaller pieces. Next, we got a bowl and put some salsa in it. Then we took the salsa and put it on the counter. Then my mom said, “Okay now put it all on the taco plate and put the plate on the table.” When I was doing that she called everybody to the table. I also put the smaller plates on the table. I was so excited to eat it because I was hungry! Everybody started eating and my dog Finn was sitting under the table waiting for someone to drop something. We talked about football. After we were done eating my dad told everybody to go to bed. That is the legend of the secret taco. I chose this story because it reminds me of my mom because I made it with her. I hope when you make tacos, you make a memory in your family. By: Jack Doyle 53

Making Tacos By: Xander Lounsbery Do you like tacos? Do want to know how to make them in your own kitchen? If you do, you should read this recipe. One day last summer I walked into the kitchen and my dad said, “Do you want to help me make turkey tacos?’’ I said, ‘’Sure!’’ The first thing we did was to pour a pound of meat in the pan and added a half of a cup of water so it would steam. Then dad asked me to pull the stems off the cilantro because the stems taste really bad! I put the stems in one bowl and the leaves in the other. After that, I said, “Can I help cut the onions?” My dad said, “Sure!” I cut half an onion and diced them. Then we poured the onion in the pan with the meat. Then we added a packet of taco seasoning. Then my dad chopped half a head of lettuce. Then we warmed the tortillas. After, we put the meat, onions, lettuce, and a tiny bit of cilantro inside the tortilla. It tasted good and I ate it with hot sauce. I hope you can make this at home and it tastes as good as it did for me. This recipe is important to me because it tastes really good and I can help make it. I like cooking with my family because it’s fun and it makes it easier for my dad. By: Xander Lounsbery 57

Next I said to my step mom, “Mariana!” She said, “What?” I said, “Dad said get in the car and we will all go eat tacos al pastor at the taco shop.” She said “Ok, I will meet you at the car!” We all went down stairs and we all drove to the taco shop together. I said hello to the waiter, so he said hello back and, “What can I get you guys?” I ordered two tacos al pastor, the waiter asked, “What do you want to drink?” I said, “Agua de Jamaica,” which means hibiscus tea. My brother Alek ordered three tacos al pastor and agua de Jamaica. My baby brother Patrick only had one taco al pastor and nothing to drink because he has milk in his bottle. My step mom, Mariana, ordered 3 tacos al pastor and agua de Jamaica to drink. And for my dad, he had 4 tacos al pastor and agua de Jamaica. When the food got there, it was red meat in a tortilla. I like to squeeze a lime on top of mine! It tasted very delicious! The tortilla was a little burned, just the way I like it! We were having a great time eating and talking together. I hope you make a memory with your family today. Tacos al pastor is special to me because it reminds me of my dad, my baby brother, and my step mom. Whenever I eat tacos al pastor, I think about my dad and family in Mexico. I get to see them when I visit them in the summer. Oh, and by the way, it’s the marinade that makes the meat red! My Family’s Steak and Potatoes By: Arianna White Do you like steak and potatoes? I sure do! My family likes to eat steak and potatoes often and also on special occasions. Let me tell you about the time I learned how to make steak and potatoes by watching my mom cook it. My mom first seasoned the steak. Then she got a pan out and put vegetable oil in it. Next she put the steak in the pan and got tongs out to flip it over, so that it would sear on both sides. Then she let it cook for about ten minutes. My mom said, “When the timer goes off, it will be done cooking.” Did you know that heat is what cooked the steak and potatoes when they were in the oven? The evidence of heat was steam and the temperature was rising. I sat on the couch just waiting for those ten minutes to pass! She came back and checked on the steak. Once the steak was done, she set it to the side. Next came the potatoes! She cut the potatoes in half. Then she put them in the oven for about twenty minutes to cook. After twenty minutes, my mom came back and checked on them to see if they were done. They were done cooking and ready for the best part… to get the cheese and the bacon put on top of them! Now we were ready to enjoy our meal. I sat next to my mom. She helped me cut my steak into squares and then we enjoyed our meal together. The kitchen is a special place to me because it makes me feel good. I feel like a grown chef in the kitchen when I get to cook with my mom and dad. This recipe is just so special because we all have a piece of our heart in the recipe and that’s why it’s so special to me. You should always cook with your family because it brings back special memories. By: Arianna White 61

Lasagna By Bianca Castaneda On my birthday we had lasagna and my grandpa made me mad and my lasagna fell on the ground. I felt bad and I felt bad for my lasagna because it was my favorite food. I said, “Sorry.” And he said, “I forgive you,” and he served me more lasagna and I felt happy!! And we had cake and I opened my presents and I got a Jasmine Doll. That is why I love lasagna. Lasagna is kind of like pizza, but it doesn’t have pepperoni. We get the frozen lasagna from Costco and that’s my favorite. When I bite into lasagna, it tastes delicious. It tastes like a warm hug. We have lasagna for special occasions, but we don’t have it on Christmas. That’s when we have tamales. When we have lasagna, there are usually six of us - my mom, my brother, mi tio, my grandma, my grandpa and me. Sometimes, we invite my cousins over. We eat at the table in the living room. We tell jokes and we all laugh at the table. We usually eat the whole tray, but sometimes not. When my cousins come over, we eat the whole tray, because there are a lot of people - four cousins and their parents. I chose lasagna over all other foods because it’s delicious and because I like spending time with my family. I hope you get to taste some lasagna some day with your family - especially your cousins. At the store, we bought 2 Digorno’s pizzas, 2 Tombstone pizzas, and 2 Tony’s pizzas. I was very, very excited. Meatloaf By Jordan Nava I was in my room and I smelled something good. I went to go check and it was meatloaf. I went to the kitchen and I said, “That smells good!” to my mom. Then we took the meatloaf out of the oven and we started eating the meatloaf. I said, “That’s good!” When the meatloaf was done, I went to the room and played games. Sometimes I watch my mom make the meatloaf. I see her put the meatloaf in the oven and it smells like a professional is cooking meatloaf. I smell it, I know that she’s making meatloaf and I feel so happy. Sometimes, my room gets filled with smoke because it has to cook for a long time, but I like that smell. My mom’s meatloaf tastes like squished meat with little bits of carrots, a little juicy. The carrots make it taste better with the meatloaf and it taste better with the juice around the meatloaf. When we have meatloaf nights at my house, we eat the meatloaf and I put tons of ketchup on it. My brother, my sister, my baby brothers, my mom and my dad eat meatloaf at the kitchen table. Tamales!!!!! So that is my tamale story. I am glad that my mommy brought this tradition back into our family. Not only are they delicious, but I think By Luna Sage Balius the best thing about making them is spending time with family and friends. Have you ever tasted tamales?????? My mom and I make tamales every year around Christmas. “Mommy, let’s go make tamales!” With a whirling whisk my mommy can whip up tamales. Let me tell you about the time my whole family was there and we were having a great time at my house. My story takes place in my kitchen when my family was helping me make tamales! All my friends and family members were helping me wrap tamales while others were cooking more!!! It was really fun and I was showing people how to wrap them, because I’ve been making them for years. And it is a family tradition, so we can do it every year! And there’s different kinds of stuff you can put in the tamales: beef, chicken, pork, cheese and you can put whatever you want!!!!!!! Even you can make up your own tamale. You can make them on any days or months. I do it in December because it’s Christmas and we give them as gifts and deliver them to neighbors. This year, we made 200!!!! And we make them in a really tall and giant pot, so we can make enough for our friends and family members. Let’s start from the beginning. In our family, we wrap our tamales in dried corn husks. The trick is to soak them in water overnight to soften them up. This makes it easier to wrap the tamales. The next part is the (maza), maize. This is a dough made from corn meal and many families use lard, but there are other healthier options such as olive oil, coconut oil, or experiment with your favorite cooking oil. By Luna Sage Balius 77

cont. RECIPE: Spread the dough out over the corn husks to 1/4 to 1/2 inch thickness. Place one tablespoon of the filling (beef, chicken, pork, Tamale Dough cheese or whatever you choose to prepare) into the center. Fold 2 cups masa harina the sides of the husks in toward the center and place in a steamer. 1 (10.5 ounce) can beef broth Steam for 1 hour. Remove tamales from husks. 1 teaspoon baking powder ½ teaspoon salt did you know... ⅔ cup lard 1 (8 ounce) package dried corn husks ...that a mixture happens in this recipe when I stir the Soak the corn husks in a bowl of warm water. In a large bowl, beat ingredients together? The evidence of a mixture is that it gets the lard with a tablespoon of the broth until fluffy. Combine the thicker the more I mix it before putting the pork mixture into masa harina, baking powder and salt; stir into the lard mixture, the tamale. adding more broth as necessary to form a spongy dough. Homemade Tortillas for Tacos By Soleil Patricio “Soleil, come downstairs now!” My sister Leila tosses a small pillow at me, “Hey! what was that for?” “Come on Soleil, were going to make tacos!” “Yay!! I love making tacos.” Papi grew up in a small village where his mom would make fresh tortillas every day on an open fire. When papi was a boy he would collect leña (firewood), to build a fire. I remember when we first got the masa flour to make tortillas for our tacos. You might be wondering how we make our tacos. We used to make tacos at our old house. I went to People’s Market with my mom to get masa flour. My mom would special order the masa flour, my sisters and I would wait for the worker to bring out the fifty pound bag of masa flour. Sometimes we got purple masa flour and our tortillas turned purple! This is how we make the tortillas; First, we scoop out some masa flour into a big bowl then we have to put water in the masa flour. You have to mix it together very well to make it masa and then we shape the masa into balls, then we take the masa and we put it on a wooden board called a tortilla press, we put plastic bags on each side so that the masa doesn’t stick to the tortilla press. Then we close the press and the ball flattens into a flat circle. The masa is shaped like a tortilla. Carefully we peel off the plastic, then we flip the flat circle onto the comal. During dinner we put the tortillas on the table, we put beans and cheese and sometimes my mom and dad put salsa on their tacos. Sometimes it tastes crunchy. It looks like a tasty and crunchy taco. This is a special food to me because we made it at our old house and it brings good memories to our family. By Soleil Patricio 79

THE TAMALES By: Brandon Figueroa I wake up at 6am hearing the sizzling noise of tamales. I’m thinking ‘ugh, it’s too early.’ Something I will never forget, is me hearing the sizzling noise of the pot while my grandma was making tamales. I tried my first tamale at the age of two. It had green salsa and chicken. I thought it was spicy but now I don’t think so. My grandma was there along with my two brothers and my mom. It took place at my House and the last time she made them was on July 26, 2018. My grandma has been making them since before I was even born, like since the 90s. First she makes the dough for the tamale, then she makes the filling for the tamale separately, once they’re both done she wraps dough with the filling in a corn husk and lets it steam until it’s done. She makes over 100 tamales and I eat them all. But now I only eat tamales in school, mostly on Tuesdays. The smell of tamales is spicy and can sometimes make your nose burn, also sometimes she makes a sweet type that I don’t like. When I look at the Pot, very hot steam comes out. I chose this recipe because tamaliz are my favorite food that my grandma makes. The most I’ve eaten was like 8-10 tamaliz my grandma has not made tamales since July 2018. I hope when people read this story they will get out and make them or buy some. Thank you for reading my story! By: Brandon Figueroa 87

Dad’s Artichoke By: Martín Lopez Have you ever tried artichoke? Maybe you have. This is the story of my dad’s artichokes. I was drawing when a strong smell floated through the air… My dad’s artichoke! I said “artichoke!!” When he put it down with two cups (one for mayo, one for butter and lemon) I picked a leaf from the stem and dipped it in the cups. I slid it into my mouth, “IT TASTES AMAZING!!!” I said. You are probably wondering how does he make it? First,he steams and boils the artichoke. then he cuts off the spikes and the stem, then he puts two cups, one for mayo and another for butter and lemon. For the butter and lemon: put a squeeze of lemon and some butter. then he pours it into the cup. Pick off leaves and dip the smooth part in the cups and eat it off. After eating all the leaves, pluck off the hairs from the core and eat it. I chose this recipe because I hope you can make a memory out of making/tasting it because whenever I make/taste it I feel closer to my family. And whenever I eat artichoke I ALWAYS give my dad a five-star rating. By: Martín Lopez 100
