MARCH & APRIL 2018 LETTER TO THE MEMBERSHIPDear Members,Very exciting times here as we continue to make progress and prepare for the historicrenovation project. With a project of this scope there is a lot of planning and preparationthat goes in. We will continue to keep you apprised of milestones. Hopefully you arereceiving our twice monthly email updates on the project (the staff and I continue toget questions around what is happening when and why did we select this path).Historically, the Club has used creative partnerships and investment structures over the years to renovateand advance the progress of the Club including when the building was originally constructed. In 1917, whenthe plans to erect the building were announced, the construction project was in partnership with the TiconicInvestment Company for a 90-year lease on the property, with the option to purchase the property withinthe first 50 years (which we did). The construction of the building was funded through a loan of $250,000 bythe Ticonic Investment Company and further funded by the Membership, the Merchants and ManufacturersAssociation, and other commercial interests that resided in the building (retail tenants). Our current planis of similar creativity, where we are partnering with a developer, who will complete a 30-million-dollarrenovation of the building in partnership with the Club. There will be a new entity created to hold the realestate. The Club retains the right to purchase the building for fair market value after 5 years following thecompletion of construction. The Club will lease back the Club spaces (non-hotel room areas) that will beoccupied, programmed, and enjoyed by the Milwaukee Athletic Club members, and their guests.Some quick updates:• The Club plans to operate in its current space through December 31, 2018• Pre-demolition and construction will occur with limited to no disruption with the day to day operations• New “Legacy” membership category and benefits coming in April – Includes benefits for existing members who commit tomaintaining membership during the redevelopment.• We will have a temporary Club space for MAC members during construction (Yes, we will still have a club offering athletic,social, food & beverage and other great programs, services, and amenities). We have narrowed in on a few locations nearbythe current Club location• Historic Tax Credit application has been approved and is on schedule with the required milestones• Developer agreements will be signed by February 28th• Proposals received by Management Partners, on March 15th• RFP for architects and designers out by March 1st• Proposals submitted by architects and designer’s no later than March 23rd. Data from focus groups and surveys will runconcurrently, and will be evaluated in the selection process for these vendors• Board review and approval of all vendors/partners to date no later than the March 26th BOD meeting• A Member Survey is scheduled to go out no later than March 23rd to gain input and insight on the programming, servicesand amenities you want to see in your new re-imagined MAC. MARCH & APRIL 2018 FOOD & BEVERAGEChef’s TableLarry’s Recipe of the Month:SteakAu PoiveINGREDIENTS 4(6-8oz) Boneless Medallions, Such as Filet Mignon Kosher Salt 1 oz Whole Black Peppercorns, Plus more as needed, 3 TBSP Vegetable Oil 1 TBSP Unsalted Butter 2 Fresh Thyme Sprigs 1 Medium Clove Garlic 1/2 Shallot 2 TBSP Brandy or Cognac 3/4 Cup Chicken Stock 3/4 Cup Heavy Cream or Crème Fraiche 1 TSP Dijon MustardDIRECTIONS1. Season steaks all over with kosher salt. Set steak on a wire rack. Set wire rack over a rimmed baking sheetand allow steaks to air dry uncovered in the refrigerator for 30 minutes. Meanwhile, crack peppercorns intorough halves and quarters, you can use a pepper mill or a mortar and pestle (wrap the peppercorns in a cleankitchen towel first to contain them).2. Preheat the oven to 375 F . Spread cracked peppercorns on a plate or in a shallow dish and firmly pressone side of each steak into the pepper to encrust each steak in an even layer. Set each steak aside, peppercornside up. Reserve any remaining cracked peppercorns. Exactly how much pepper adheres will depend on thedimension of the steak.3. In a large stainless steel or cast iron skillet, heat oil over medium-high heat until simmering. Add steaks,and cook (peppercorn side down), until peppercorns are well toasted, about 3 minutes, carefully turn steaks,trying not to break the peppercorn crust. Add butter, thyme, and garlic, to the pan. Cook while basting thesteaks with a spoon, until steaks are completely seared on both sides. Remove from the heat.4. Transfer steaks to a rimmed baking sheet. Using an instant read thermometer, check the internal temperatureof the steaks. If it reads 125 F., they are ready to be served medium rare. If you would prefer them done moretransfer them to the oven and cook until the correct temperature is reached.14

Pour off all but 1 tablespoon of fat from the skillet and discard the garlic, and thyme, add the shallot and any reserved peppercorns, return pan to medium heat, and cook shallots, stirring, until shallots are caramelized. 6. Add brandy or cognac. Note: to prevent an unexpected flare-up of flames, you can turn off the burner, before adding the alcohol. Cook until the raw alcohol smell has burned off and almost completely evaporated. 7. Add chicken stock and bring to a simmer, stirring and scraping up any brown bits in the bottom of the pan. Cook the stock until reduced by half. Whisk in the cream or crème fraîche, simmer, stirring often, until sauce has reduced enough to glaze the back of a spoon. Whisk in the mustard and season with salt and pepper. 8. Arrange steaks on plates and pour sauce on top. Serve with french fries, mashed potatoes, or other sides of your liking. MARCH & APRIL 2018 MAC WOMEN MAC WOMEN Past Events: January & February MAC-lebrity Happy Hour: On January 16th, MAC members David Kriete, Laura Rizzo and Tina Weyand served up drinks for a great cause, The Special Olympics of Wisconsin. Thanks to our stellar bartenders and a great turnout in MAC's, over $1,200 was raised for The Special Olympics. Be sure to attend the next MAC-lebrity Happy Hour in March, date and time TBD! Women's Day: The women of the MAC were treated to a fun day on January 29th, with a gift bag giveaway in the morning, a delicious lunch spread in the afternoon and a boot camp followed by wine and chocolates at night. MARCH & APRIL 2018 MAC HISTORY Thanks to THE TANKThe Men’s Tank (aka the casual dining area next to the men’s swimming pool on the 6th floor) is a well-known, almost legendary area of the MAC. Yet, what do members really know aboutit? The tradition of MAC members eating next to the swimming pool actually pre-dates our currentbuilding, as lunch was also served poolside at the Milwaukee Athletic Club location inside the WellsBuilding from 1902 until 1918. The tradition was going so strong, that it was then re-established inour current building, and has been going even stronger ever since. Located next to the men’s lockerroom, athletic facilities and pool meant it was the center of the MAC universe. Being located in a men’sonly area gave a new meaning to casual dining, as a towel wrapped around the waist was consideredtotally proper. Disclaimer - today it’s still very casual but both men and women are invited - withshorts and shirt required. That’s not all that has changed. Even just a few decades ago, Saturday Tank service saw Burgers and Gold Brick Sundaes as the most popular items. Nowadays, while soup-du-jour remains a mainstay, The Tank replaced its menu with a much healthier option – the salad bar.The Tank | circa 1940s Secrets from The Tank: Without a doubt, eating within close proximity of the pool led to comical circumstances.Yes, members, fully clothed, have leaned back too far and fallen into the pool. Another classic momentcame when a member eating lunch (who happened to be an ex-Milwaukee Brave), began to get annoyedwith the lap swimmer splashing him during flip-turns. So he decided to grab a roll off the table andbean the swimmer right in the head from about 30 feet away. Hard to say what was more impressive- the throw, or the look on the swimmers face.The tank is popular not only for a quick bowl of soup and salad. It’s the place to meet friends. Moreoften than not a member arrives as a single, and soon after is sitting with a pack of friends. Isn’tthat what a private Club is all about? You never know, you may be sitting next to some of the topexecutives in the city. It’s such a unique lunch experience, that you won’t find anything else like it inMilwaukee. If asked where the best place to network with other members is: the answer is, The Tank.24
