NASI LEMAK The top spot must surely go to nasi lemak, which refers to rich, creamy rice cooked in coconut milk. Knotted screwpine leaves are often added during the cooking process to give the dish a beautiful fragrance. It is traditionally wrapped in banana leaves with fried anchovies, sliced cucumber, hard-boiled egg, and a slightly sweet, spicy sauce called sambal. These days, many wrap it in grease-proof brown paper. You can find many makeshift stalls in most local neighborhoods where they sell it. Some operate from their car boots or set up a simple table at a prominent street corner. malay cuisine

THOSAI

Thosai is a South Indian savoury, thin pancake made from a batter of various fermented pulses and rice flour, which is then cooked on a flat griddle. The result is a pancake that’s crispy around the edges and chewy in the middle with a slightly tart taste. The dish is usually eaten at breakfast with accompaniments such as spicy chilli chutney, cooling coconut chutney and a small bowl of lentil curry or sambar. Although cutlery is available, the traditional way to eat a thosai is using your right hand – it really is the most practical way to soak up all the delicious sauce. Indian cuisine
