78 | CULTURE TRADITIONS : PONGAL FESTIVAL Pongal Festival in Malaysia Pongal, a harvest festival celebrated by Hindus across the world, is usually celebrated in the middle of January over a period of four days. Pongal, which means ‘boiling over’ in Tamil, is celebrated to thank the sun god, rain and farm animals that help them in the harvest. The main ceremony of Pongal is letting rice boil over with milk in a clay pot, which symbolises future prosperity for the family. The ceremony can be seen at a temple, too, where devotees recite prayers as the sarkkarai ponggal dish is boiled. Pongal begins with the making of Kolams—ground patterns made out of rice flour, at the entrance of homes on the first day. It is believed that drawing the Kolams before the sun rises will enable the sun god to see them and come to bless the family. The use of rice flour is due to the belief that insects would feed on it and bless the household. The second day is the main day where the sarkkarai ponggal dish is boiled with fresh milk in new pots. Fresh turmeric and ginger are tied around this pot before a mixture of rice, milk, black sugar and ghee is boiled in the pot on an open fire. The moment the rice boils over and bubbles out of the clay pot—a sign of good luck, Hindu devotees will cheer and say out ‘Ponggalo Pongal’. After the ponggal dish is tempered with cashew nuts and raisins fried in ghee, it will be offered to the Sun God first, on a new banana leaf along with other traditional delicacies like vadas and payasam, as well as sugarcane, grain and sweet potatoes. The third day is followed by Mattu Pongal or the Pongal of the cow where this day is dedicated to the revered cow. The fourth day of Pongal is the day when friends and relatives visit each other to strengthen their relationships on this special occasion.

94 | FOOD FESTIVE FOOD Malay Lemang Made of glutinous rice with coconut milk baked in hollowed bamboo trunks, Lemang, or known as ‘rice in bamboo’, is a traditional Malay food prepared for celebrations such as Hari Raya Aidilfitri and Hari Raya Haji, where you can see vendors selling lemang along the roadsides, especially in village areas. The preparation of lemang may look simple but the cooking process requires at least four hours. You will need to cook it with coal in an open area. Lemang is usually bought ‘by the bamboo’ and should be left unopened until it is ready to serve. It is usually eaten with rendang. Bubur Lambuk Bubur Lambuk is a special Malay porridge prepared when breaking fast during the fasting month of Ramadhan. Bubur Lambuk Kampung Baru is the tastiest and most famous of all the versions found in the country. This aromatic porridge is given away by the Mosque to the Muslims every Ramadhan and you will expect a very long queue waiting for their turn. Bubur Asyura Bubur Asyura is a type of porridge served on 10 Muharram which is also known as Hari Asyura, hence naming after this special day. Bubur Asyura must consist of exactly ten types of ingredients regardless of the types, or else it is not Bubur Asyura. It is prepared by the mosques and distributed free to the Muslims on this day. Each state has different version of Bubur Asyura since the method and the ingredients used in one state differs from another.

FOOD | 95 FESTIVE FOOD Chinese Kuih Kapit Made of five main ingredients—sugar, flour, eggs and coconut milk, kuih kapit, or commonly known as ‘Love Letters’ is Chinese traditional festive cookies that is served during Chinese New Year. It is fluffy, crunchy and not too sweet, with fragrant smell. It is made by sandwiching a liquid batter between two metal plate moulds and baking it on open charcoal heat. It is usually folded into a triangle without any fillings. The baking process is the hardest stage and it consumes much of the time. You need to be patient enough to avoid overheating the kuih kapit and burning it. Also, you need to take note that too little or too much of batter can affect the texture of the delicacy. During the good old days, making kuih kapit is usually a family affair whereby the young girls would prepare the batter batch while the adults would be at the charcoal stove baking the prepared batter the whole day. Mooncake Regarded as an essential delicacy during Mooncake Festival, mooncakes are Chinese pastries which consist of a thin tender skin wrapping a sweet, dense filling, containing salted egg yolks in its centre. Traditional mooncakes have an imprint on top which consists of the Chinese characters having the meaning of ‘longevity’ or ‘harmony’, as well as the name of the bakery and the filling in the mooncakes. Mooncakes are typically round or rectangular, measuring about 10 cm in diameter and 5 cm thick. Symbolizing the full moon, mooncakes are eaten in small wedges accompanied by Chinese tea on family or friend gatherings during the Festival. Mooncakes are expensive and range from RM8 to RM20 per piece. Nowadays, we can find a great variety of mooncakes with different fillings such as lotus seed paste, Jujube paste, five kernel, tiramisu, green tea and chocolate, as well as modern varieties of mooncakes which are different in their crusts and require refrigeration such as snowy mooncakes, or ‘ice-skin mooncakes’.
