St. James is a traditional smokehouse located in the Royal Burgh of Annan, Scotland. We select only the finest quality fresh Scottish Salmon from our approved Scottish salmon growers for our ‘Scotch Choice’ & ‘Scotch Reserve’ products. The salmon is transported to the St. James smokehouse within hours of harvesting from the rugged seas of the Western Coast of Scotland. We hand cure each fillet with pure sea salt & brown sugar and then traditionally smoke over smoldering oak chippings. St. James Smokehouse uses only natural, pure & fresh raw materials and we strictly forbid the use of artificial flavours or preservatives. All our Scottish products are custom made to order and are distributed throughout every day of the week - guaranteeing maximum freshness from a truly authentic product of Scotland. BRC Certified 2010 – 2017In May 2017, St. James Smokehouse received a Grade“AA” accreditation from the British Retail Consortium’s(BRC) Global Standard for Food Safety for a secondconsecutive year. We maintained “A” grade from 2010to 2015. We did not apply for BRC certification priorto 2010. In 1998, the British Retail Consortium (BRC)developed and introduced the BRC Food TechnicalStandard in order to evaluate manufacturers of retailers’own brand food products. The BRC has evolved tobecome an invaluable standard to organizations andis regarded as the benchmark for best practice in theindustry. Many UK, North American and Europeanretailers, and brand owners will only consider doingbusiness with suppliers who have gained certificationto the appropriate BRC Global Standard. Therefore youcan be assured that our manufacturing process andfacility is audited by a third party organization for FoodHygiene standards and good manufacturing processes.

All 114g products are available in master cases of 120 units or repacked to 12 units per case. All 228g products are available in master cases of 75 units or repacked to 12 units per case. All 454g products are available in Master cases of 35 units or repacked in 4 units per case. Minimum order stipulations are that the products are ordered in multiples of 12 units per case. All the products are received fresh from our smokehouse in Scotland within 3 days from processing. If you require the product frozen then we can also blast freeze the product before they are dispatched. The products are all natural and we do not use any additives or preservatives and the traditional smoking processes we use provide the following Shelf Life; –– Shelf life for fresh products is 28 days from manufacture. –– Shelf life for frozen products is 1 year from production and 21 days from the date of defrost under refrigeration. More than 70 professionals, Michelin starredchefs, members of the French Culinary Academy, university lecturers, nutrition and health consultants, chemicalengineers, famous oenologists and master sommeliers grant every year these prestigious quality awards.How are they judged?Over a 4 month period, the Institute calls upon more than 70 internationally renowned experts to evaluatethe quality of the submitted products. We send zerowaste to land fill. We compact 100% of our styrofoamboxes which are then recycled into picture frames,motorcycle helmets, etc. All of our fish waste is sold to petfood manufacturers. All cardboard is re-cycled. Afterburnerburns all smoke & tar particles resulting in colourless,odorless smoke emissions into the atmosphere.
