Bacon is a salt- cured pork product that is made from pork belly or less fatty back cuts. Just Florence • Sheffield • Killen as there are many different ways to incorporate bacon into favorite dishes, several methods exist for preparing the food, including in a fryer, on the stove top, in a microwave or in the oven. While each chef has his or her preferences, oven cooking may produce the most consistent results. According to the online resource The Spruce: Eats, bacon is fatty, so it needs to be cooked slowly at a low temperature so that most of the fat renders away while leaving the finished product crispy and golden brown. To achieve this result most easily, arrange bacon slices on a sheet pan and place in the center rack of a cold oven. Close the door and turn the oven on to 400 degrees Fahrenheit. Check the bacon after 17 to 20 minutes. The bacon is done when it is golden brown but not excessively crisp. Cooking time will vary depending on the thickness of the bacon slices and how quickly the oven reaches temperature. Remove the sheet pan and transfer the bacon to a plate lined with paper towels to absorb any fat. Cooking bacon in this manner also enables home chefs to prepare a greater amount of bacon at one time, which can be beneficial when feeding a hungry crowd. Two years later, this information appeared in the Florence Herald: “Work on an $80,125 concrete and steel stadium on the 25-acre tract of land known as the Kernachan property is expected to begin at an early date, funds for which have already been released by the Works Progress Administration (WPA), it was announced by J.W. Powell, Superintendent of Education.” The article goes on to say that the project “consists of a drill field, a baseball field, a stadium which will seat 5,000 persons, a field house with two restrooms for two teams and the public, in addition to beautification of the grounds.” The 25 acres would also become, in 1951, the site of the new Coffee High School (which was replaced in 2018 by the new Florence Middle School building). Those who built the stadium and the impressive stone wall along Royal Avenue (along with many other projects in Lauderdale and Colbert Counties) came primarily from the Civilian Conservation Corps (CCC), a national organization for workers within the WPA – part of President Franklin D. Roosevelt’s “New Deal” during the Great Depression. Since its opening in the early 1940’s, this well- constructed stadium has hosted far too many football games to count. All home games of Coffee High School, Bradshaw High School and Florence High School have been played there. Local people still remember with great pleasure the annual game on Thanksgiving Day between arch rivals Sheffield High and Coffee High. (The game alternated from year to year between the stadiums at the two schools.) Also, until Lewis Field was built in August 2021 www.kidsvillenews.com/shoals Kidsville News! 19
